Creamy Mango Ice-cream


Fresh cream Mango Ice-cream for this summer....

Vacation is here for kids along with summer crafts & other activities indulge them in making this lovely treat, they will be happy to help as my little one did

Mango Season is here, Ripe & fresh Mangoes are available Now so make the most use of it....

Here is a simple Fresh cream Mango Ice-cream with just very few Ingredients Check out my other Mango Ice-creams and falooda recipes: Mango delight Icecream, Mango Falooda, Fresh Mango icecream

This is my Third type of Ice-cream with Fresh mango & cream make this today and relish fresh natural mango ice-cream

Ingredients Needed:

Mango pulp or puree: 1 cup/ 200ml
Condensed milk(Amul milkmaid): 400ml
Fresh Cream: 200 ml(1cup)

Method:

Peel the Mango skin & cut into pcs put in a blender & make Puree
Beat the cream with hand blender or whisk slightly when its cold then add mango puree
And further beat till it mixes now add condensed milk 
and whisk till everything is mixed up

Transfer to a Container with lid, close & freeze
For Best Results after freezing for 4-5 hrs remove and churn it in a blender then again Transfer to a Container with lid, close & freeze for 6-8 hrs

Serve chilled scoops & enjoy this Creamy fresh Mango Ice-cream




Note: This ice-cream is on the creamier side so does not hold firm for long time, Enjoy the creamiest ice-cream

Pathrode Colocasia leaf(patra)


Spicy Tangy Pathrode after long long time relishing hometown food😋😋

This dish is called by many names Patra or Pathrode this is made on Colocasia leaves

Spreading a spicy mix & making layers of leaves rolled up & steamed then shallow fried or just tempered its a true delicacy 

Ingredients for quick Pathrode

Chickpea flour(Besan): 1cup
Rice flour: 4sps 
Red chili powder: 1-2 sps
Jeera powder: 1sp
Garam masala: 1sp
Tamrind paste: 1/2cup
Salt to taste

For the tempering
Oil: 4sps
Sesame Seeds: 2sps
Grated coconut: 2-3sps

Procedure for Pathrode 

Wash the Colocasia leaves & pat dry it
Remove the thick stem joint & vien line 
Make a paste of all ingredients mix well add little water to make a thick homogenous mix

Keep the leaf on worktop & face shining side of leaf down
Apply the first layer of the paste on the leaf and spread the paste thoroughly check this video 

Then keep the second leaf on it and apply spice paste on second leaf
This way make 3-4 leaf stack
Then fold the side ends & roll it to form a leaf roll

Keep the steamer ready & place the prepared leaf rolls in it & steam for 20 min

Once done wait it to cool down then cut into pieces Pathrode is ready

For the tempering & frying
In a pan add oil & heat it
Then add sesame seeds fry for 2min
Then add the Pathrode & fry 2min each side
Remove & serve with grated coconut 

Spicy Pathrode or Patra is ready enjoy this vegeterian delicacy 

Aam panna mango drink


Aam panna sweet & sour mango drink made using raw mango, for this summer quince your thurst by making this cooling Aam panna mango drink

Enjoy this sweet & spicy mango drink any time by making this concentrate at home. 
So easy to make you must definitely try this recipe 

Ingredients 
Raw mango: 1cup grated
Sugar: 1+1/2 cup
Cumin(jeera) powder: 2sps
Paprika: 1sp
Salt to taste
Lemon juice: 1sp while serving

Procedure is as follows 
Grate the raw mango discarding the skin
In a pan add raw mango & sugar(can even add more sugar if desired)
Cook for 5-8 min stirring in between
Obce its nicely bubbled up switch off heat & let it cool down

In a blender jar add this cooked mango sugar mix add jeera powder, paprika, salt & little water make a fine paste

Remove & store this concentrate in a bottle & use as an when required

To make this Aam panna In a serving glass add the concentrate 1/4th cup add water & ice mix well add lemon juice & serve chilled

Aam panna sweet & sour mango drink is ready to serve

Breadfruit fry with Veg Thali


Bread fruit or Neer Phanas fry with Vegeterian Thali of Drumsticks sambhar & Rice

Crispy fried spicy breadfruit slices goes well with Rice & Sambhar

This is also a coastal delicacy mainly found across the coastal belt of Mangalore & Kerala Breadfruit fry is very famous side dish, Try this combo

Ingredients
Bread fruit: 1 thinly sliced
Red chili powder: 1sp
Turmeric little
Salt to taste
Semolina: 1/4 cup
Oil: 4sps


Procedure is as follows
Clean the breadfruit cut it to half then thinly slice it to pieces
Add salt to taste mix & keep aside for 5 min
Then sqeeze out water add chili powder & turmeric & mix all together on the breadfruit keep it for few min

On a hot griddle add 2sps oil
Roll the marinated breadfruit on Rava till it coats nicely
Fry it in oil for 2-3 min closing lid sprinkle little water & cook 2 min
Then turn & cook for 3 -4min till crisp
Breadfruit fry is ready to serve

Jeera Rice Paneer Masala


Jeera Rice is Fragrant Rice Flavoured with Cumin along with Paneer Masala, vegetarian combo loved by all
Using ghee gives it a nice Aroma, with very few ingredients you can create this flavourful Rice
Ingredients
Sonamasuri Rice: 2 cups
Ghee(clarified butter): 4 tsp
Cloves: 5-6
Cinamin: 1 inch
Bay leaves:2
Slit green chilies: 4
Jeera (cumin): 2sps
Water : 3 cups
Cashew nuts fried for garnish




Recipe is simple 
Soak 2cups rice for 10 min
In a pressure cooker add Ghee
Then add whole spices Cloves ,Cinamin, Bay leaves
Add Slit Green chilies & Jeera 2sps mix
Add Soaked drained rice
Add Water 4 cups for 2 cups rice
add salt & cook for 2 visels....
Jeera rice ready garnish with fried cashew


Ingredients for simple Paneer Masala 

Paneer, cubed 250 grms
Onion 1, 
Cashew:5-6
Tomato 2 
Moti elachi 2 
Red chilli powder 1 tsp 
Jeera powder: 1/2 tsp
Garam masala powder 1/2 tsp 
Oil/ghee 3-4 tblsp 
Salt as needed 
Coriander leaves 2 tblsp



Method

1. Cube onion and tomato,keep ready
 In a pan add Onion, cashew moti elachi & water & boil for 5 min
Then Add chopped tomatoes to it and cook covered until mushy.
2. Cool and blend in a mixer 
Mean while boil water and keep the paneer immersed in the hot water until use.
3. Heat pan with oil/ghee and add the strained mixture. Add tomato sauce,salt,red chilli,jeera powder & garam masala
4. Fry till oil separates and forms like a thick paste. Add water 1/2cup Add paneer cubes drained from water & cook 2-3 min
5. Cook on low flame for 2-3 minutes. No need to boil for more time.
Garnish with coriandar leaves

• You can even use thin cream or milk to make more creamy

Simple paneer masala is ready to serve with Jeera Rice

Lady fish curry


Coastal Delicacy fish curry & Rice along with Fish fry, This is the staple food of Coastal belt.

Prepared Lady fish curry which is a sweet fleshed fish

Fish Curry for Fish fillets cleaned 4-5 steaks

Ingredients for lady fish curry
Coconut grated: 3/4th cup
Red chilies: 4-5
Tamarind/ Amsol: 2sps
Onion: 1/2
Turmeric: 1pinch
Coriender: 2sps


Method:

Gind All the Ingredients with 1 cup water & make a fine masala
In a Deep dish(kadai) add this masala & little water(to make curry consistency 1 cup water)
Bring to boil then add salt to taste

Add fish fillets & cook covered for 10 min
In between check the fish if cooked just remove from heat

Serve with Boiled Rice, Fish curry meals is ready to serve

Masala Fish Fry also called the Naked fry 

This Seer Fish Masala fry is spicy & masalas are well coated so no extra coating is required while frying so these are called Masala fry 

Combine it with South Indian style Fish curry . I have used Aachi Fish Fry Masala for this Masala fry

Seer Fish steaks Masala Fry recipe

Ingredients for Masala Fry(4-5 fish steaks)
Aachi Fish Fry Masala: 4sps
Tamarind Paste 
or else
Lemon juice:1/2
Little Salt to taste
Coconut Oil: 3-4 sps
Curry leaves few

Marinate the fish steaks apply salt(very little )to taste keep for 5 min
Mix together Aachi Fish Fry Masala &1/2 Lemon juice or tamrind paste 2-3sps to form a thick paste 
Squeeze the fish remove excess water & apply this paste leave to marinate for 1/2 hr to 1 hr

In a pan heat Oil on tawa add curry leaves then place the fish & fry 2-3 min each side....

Tawa Masala fish fry ready serve with Fish curry Rice
