Pumpkin Avial with Peas

Pumpkin Avial with Peas 
This is a coconut based gravy, with the combination of fresh Green peas & Pumpkin you will get this delicious & creamy Avial

Pumpkin Avial is from kerala cuisine and has much use of coconut in the gravy. this is a creamy gravy and sweeter compared to kurmas. 

You can add any veggies of your choice I have added Fresh Green peas & Pumpkin in this recipe

Ingredients:
Fresh peas: 1 cup
Pumpkin: 1+1/2cup
Onion: 1
Tomato: 1big
Oil: 2-3 sps
Mustard seeds: 1sp
Curry leaves: 4-5

For the Green masala
Coconut grated: 3/4th cup
Green chillies: 4
Coriender leaves: ½ cup

Method:
Fresh peas cooks fast so no need to pre-boil it can cook in the gravy itself
(If using Green peas soak it & pressure cook for 1 vissel)
Grind all the Ingredients (under to grind) to a fine paste using enough water
In a Deep dish add Oil & splatter mustard seeds add curry leaves
Add Onion chopped & sauté till transparent, then add Tomato chopped, add cubed pumpkin after removing its skin

Fry tomato add salt, so that tomato will get mushy..if req add 2 sps water, once tomatoes are mushy you can see the pumpkin has also changed color
Then add this Green paste (blended) & fry a min add fresh peas(or boiled peas)
Mix & add 1 cup water & cook with lid till Peas are cooked
Adjust salt & add more water if you want to make it desired consistency
Pumpkin Avial with Green Peas Ready to Serve with Appam or Rice.

Stir Fried Moth(Matki) beans


Stir Fried Moth beans goes well with Chapati, or a side dish with Rice & Daal
Nutritious Moth beans are very easy to digest & very tasty. 

For this healthy stir fry all you need are basic onion & tomatoes.

Ingredients required:
Moth beans soaked: 1cup
Onion: 1
Tomato: 1
Garam masala: 1sp
Red chili powder: 1/2sp
Coriender leaves: handfull
Lemon: 1/4

Soak the Moth beams(Matki) overnite. then drain and leave it(you can even sprout it)

In a dish add Oil, add mustard seeds and curry leaves
Add Chopped Onion, fry it the add chopped tomato & little salt
Fry till tomatoes are mushy add garam masala & chili powder then add the soaked Moth beans

Fry nicely then add water 3 cups & let it cook with lid till the beans are soft
Lastly add little more salt to adjust & coriender leaves. mix well
Add few drops of lemon juice

Tasty Stir Fried Moth beans are ready to serve

Prawns Butter fry


Crispy Prawns Butter fry, good starters for party. Crispy prawns fry with Garlic flavor & tossed in butter, Make this Delicious juicy prawns fry follow this step wise procedure

Recipe for Prawns fry:

Ingredients

For the Marinade:

Prawns: 10
Lemon juice: 1/2 lemon
Pepper powder: 1-2 sps
Salt to taste


For coating
Corn flour powder

For frying

Chopped garlic: 4-5 sps
Oil for deep frying

For tossing:

Butter: 2sps
Spring onion little
Chopped garlic little


Method:

Clean the prawns by removing its head & de-skin keep the Tail intact
Devein & wash the prawns nicely

Marinate the Prawns in lemon juice, salt & pepper powder for 15 min

Squeeze excess marinate then Squeeze each prawns nicely & coat with cornflour

Tab a little so that cornflour sticks then Dust off excess cornflour, do this for each prawn

Meanwhile to make Garlic oil, Take just enough Oil to slightly deep fry the prawns

(Little more oil than shallow frying dont use too much oil as we will fry garlic in it)

Chop garlic very finely & fry it in oil till gets brown & remove...

discard the garlic use just the Oil. (This is optional you can fry the prawns in Normal Oil also)
Next step is to deep fry these coated Prawns in the above prepared Garlic Oil
Can fry 4-5 at a time,  just for a minute or so
Remove on an absorbent Paper, Once all Prawns are fried.

Tossing:

Take a Pan keep on low heat add butter

Once changes bit colour add spring onions & chopped garlic fry it then add Fried Prawns & give it a toss.

Creamy Mushroom Pasta


Creamy Mushroom Pasta  Saucy pasta, Macaroni or Pene kids love this with creamy sauce 

Pasta is easy to cook snack special when kids keep demanding it
So give it a go, my kid loves this pasta, this was a hit with his little friends also, they all gulped it down in no time. This time tried pene paste with Mushrooms. For my previous pene pasta recipe click here: 

You can make this Creamy Saucy pasta with just macaroni or just pene or spaghetti which ever you like

Ingredients:

Cooked pasta: 2 cups

Seasoning: Italian seasoning
Amul cream: 1cup
Pasta sauce: 2tbsp or(can use tomato sauce)
Noodles masala: 2tsps
Mushrooms chopped: 1 cup
Butter: 2tbsp



Follow this easy procedure:

In a large dish add 1 liter water add salt & add pene & cook the pasta for 5-6 min
Check if uncooked cook further till everything cooks & is soft
Then drain keeping little water separately

Keep this cooked pasta in a bowl of water until use

In a deep dish add butter then once medium hot add the mushrooms  & mix cook till it changes color
Then add Italian mixed seasoning & Noodles Masala

Mix add the cream & stir add very little salt(noodles masala will be salty)

Keep steering till its thickened a bit then add the cooked pasta and mix

Now add the Pasta sauce(I've used tomato sauce) & mix if its too thick add the reserved water little

Nutritious Creamy Saucy Mushroom pasta is ready to serve, Kids enjoy this a lot as its creamy & tasty, You can sprinkle any cheese of your choice on the Pasta & serve
