Stuffed Pomfret


Stuffef Pomfret for starters Fish like Pomfret is very delicate on the pallete so can eat Guilt free
 
Green Marinated fish is Pan fried on low flame. The stuffing makes this fish soft on the inside

Ingredients:

Pomfret fish: 2
Lemon         : 1
Green chilies: 5
Pudina leaves: 1cup
Coriender : 1cup
Gingergarlic paste: 1sp
Onion: 1

Method:

  • Clean the fish & Make a slit Pocket( place fish sideways & cut through bone making a pocket)
  • Give slit marks on the fish as well
  • Apply salt to taste & 1/2 lemon juice keep aside for 10 min
  • Make a Paste of Other Ingredients: Greenchilies, pudina, coriender, gingarlic ,onion lemon juice 
  • Apply the paste in the slit pocket like stuffing & also on the top of fish 
  • Marinate the fish in this Green paste for half an Hr to 1 Hr
  • Pan fry the fish both sided for 5-8 min 
Stuffed Pomfret is ready, enjoy the starters

Fried King Fish Platter


Presenting to you Fried King Fish platter 

These are Seer fish fillet also known as King fish/ Surmai/Iswan, tasty & easy to cook doesn't take much time at all.....Worth it king fish fit for a king to dine

Fish fry, Seer fish fillets fried coated with Semolina(Rava) for the crispy fish fries, Served with Fish curry & Rice

With very few Ingredients this crispy fish fry is ready


Ingredients:

Seer fish Fillets: 2
Red chili powder: 2-3tsps
Turmeric: 1/2 tsp
Tamarind paste: 2tbsps
Coconut Oil: 4-5 tbsps
Salt to taste
Semolina(Fine Rava):1/2 cup
Salt to taste



Method
Take Seer fish steaks & clean several times
Marinate with salt leave for 5 min
Mix together Red chili powder, turmeric & tamarind paste
Apply this paste generously on fish fillets 

Coat these in Semolina(Rava)both sides & shallow fry in oil or Tawa fry on a pan in lesser oil

Fish fry is ready to serve


For Grilled Fish
Apply salt & lemon to fish Fillets leave 10 min
Grill on wood fire or Griller 



Goan curries:

Goa cusine has a huge influence in Spicy Fish curry. Goan curries use a lot of coconut, curry leaves while chili peppers, spices and vinegar are also used. Fish curry and rice forms the staple food of the community, I have grown up feasting on this cuisine, Spicy curry being favourite along with Fish fry


The traditional coconut curry is a curry made with coconut juice is quite popular. The Goan fish curries and prawn curry are known for their taste and renowned in the whole of coastal India while fried fish dishin their style is well known.This spicy Fish curry is a  coconut and kokum curry which is also very popular


Fish Curry for Fish fillets cleaned 2-3 large steaks

Ingredients
Coconut grated: 3/4th cup
Red chilies: 4-5
Tamarind/ Amsol: 2sps
Onion: 1/2
Turmeric: 1pinch
Coriender: 2sps
Salt to taste


Method:

Gind All the Ingredients with 1 cup water & make a fine masala
In a Deep dish(kadai) add this masala & little water(to make curry consistency 1 cup water)
Bring to boil then add salt to taste
Add fish fillets & cook covered for 10 min
In between check the fish if cooked just remove from heat

Serve this Fish curry with Hot Rice & fish fry

Chicken gravy with Kori Roti


Chicken gravy this spicy coconut milk chicken gravy can be served with any roti, tastes best when served with Kori Roti 

Kori Rotti is paper thin Rice rotti is a famous Mangalorean Rotti prefered to dip & soak in gravy & eaten.....best served with Chicken curry with thin coconut gravy & aromatic spices of south just arouse your senses....Bon Apitite!!!

Ingredients

For the Marinate
Chicken : 1/2 kg
Ginger garlic paste 2sp
lemon: 1/2
For the Spice powder
Red chilies 10
coriender seeds 2sp
jeera 1sp , 
methi seeds 1/2sp , 
peppercorns 5-6 ,
fennel (sauf)  1sp 
For the Gravy
Oil : 2sps
Onions : 3
Tomatoes: 2
Coconut: 1/2
Poppy seeds: 3sp

Recipe Chicken gravy
  • marinate the chicken with Ginger garlic paste & lemon for 10 min.
  • Spice powder; Roast 10 red chilies, 2sp coriender seeds, 1sp jeera, 1/2sp methi seeds, 5-6 peppercorns, 1sp fennel (sauf) and make powder. (Note; this powder can be made more & stored for other uses like chicken sukka)

Method 

  • In a Cooker add 2sp oil, add 3 Onions chopped fry 
  • Add the marinated chicken & fry then add 2 tomatoes chopped & saute for 2 min
  • Add the above spice powder mix & fry for 1 min, 
  • Add paste of (1/2 coconut with soaked Poppy seeds3sp) mix 


  • Add salt & water 2small cups. cook covering the lid for 2-3 visels

Jowar Roti & Chicken Curry




South Indian special Jowar Roti/Jolad Roti is a flat bread Served with Chicken gravy, this combo is loved by All. 

Some find it difficult to Make this flat bread & think its hard to achieve perfect Rotti so here is detailed recipe

Ingredients for Jowar Roti: 

Jowar flour: 1 cup
Water: 200ml
Oil: 2sps(optional)

Salt to taste

Serves 4 medium sized Rotti

Method to follow

1. Boil water in a sausepan & Add Oil 2sps little salt
2. Then Add Jowar flour don’t stir let it boil

3. After 2 min stir it with rolling pin & break lumps if any
4. Remove on a plate let it cool down then add more flour & knead the dough well till its soft (like chapati dough)

5.Divide this in 4 parts, make balls
6.Take a Portion on a Roti rolling & start Rolling roti as thinly as you can (just like chapati)
7. Slowly take it & place on hot griddle

8. Apply little water on top then Cook for 3 min first side 
9. Then after 2-3 min turn slowly to roast other side( can even press it will puff up)
10. Cook for 2-3 min till it roasts this side then Remove on a plate

Serve with Gravy of your choice I have served with Chicken gravy

Rice Shavige Bhath


Soft Rice Noodles tossed & cooked till fluffy, this is a breakfast recipe

Savory Breakfast dishes are a hit.....Everyone Loves this Light breakfast Rice Vermicelli  Noodles tossed with Onions this dish is popularly known as Shavige Bhath

Traditionally this is served as Breakfast dish in South India, Now its also a popular snacks dish for the evenings

Ingredients:
Rice vermicelli(Thin): 2 cups
Oil: 3-4 sps
Mustard seeds: 1sp
Curry leaves: 6-7
Onion sliced: 1
Green chillies: 2
Garam masala: 1sp(optional)
Coriender leaves: ½ cup
Ghee(Clarified butter): 1sp
Water: boiling hot 4 cups
Lemon juice: 1sp
Cashe nuts fried for garnishing
Salt to taste

Method:
Heat oil in a pan & give tempering of mustard seeds & curry leaf
In the meanwhile keep Water(for 1 cup vermicelli 2 cups water) total 4cups to heat & bring to boil
Then in the pan add greenchilies & onion julians & sauté till colour changes

Then add the Vermicelli & roast nicely on medium flame for 5 min


Then  add Boiling Water must be hot
Mix add salt & garam masala( ortional) then let it cook for 2-3 min closing lid

Mix well add coriander & ghee cook abt a minute it will dry out
Add lemon Juice &  cahew nuts give it a mix

Shavige Bhath is ready. Serve for breakfast this tasty Rice Vermicelli

Paav Bhaji


Paav Bhaji, a mixed vegetable delight. This is a popular side dish

All the mixed vegies are cooked with tomatoes & spices, then mashed up to make a fondue style thick gravy to dip the bread.

For this spicy tangy fondue chopped onion is added for crunch & garnished with butter. This  is served with crispy fried Paav/ Bread, So enjoy this street food as breakfast or snacks

Ingredients Needed

Peas : 2cups
Mixed vegetables: 2 cups(Carrot, potato, beans)
Onion 2
Gingarlic paste: 1sp
Tomato 2-3,
Pavbhaji masala 1/2sp,
Redchili powder 1sp,
Turmeric : 1/2 sp

For garnishCoriender leaves : 4-5 sps
Onion chopped: 1/2
Butter: 1-2 sps
Lemon: 1/2

Procedure is as follows:

In a pressure cooker
Add Oil & Add Onions chopped & fry till transparent then 
Add gingarlic paste, stir
Add Chopped tomatoes, add salt
Add pavbhaji masala, redchili powder
Add haldi & cook 2 min, add chopped veggies & peas
Mix well & then Add 1cup water & cook for 3 vissels......

Once cooled down open the cooker & mash everything & cook for 5-8 min till it thickenes

Paav Bhaji is ready Garnish with chopped onion & lemon juice, Serve with fried Paav( soft bun)

Ingredients:

For Calzone Base:

All purpose flour:1/2 cup
Yeast: 1 tablespoon
Sugar: 1teaspoon
Water: 1/2 cup
Salt little


For Stuffing

Paneer: 1/2 cup
Pizza Sause
Mozzarella Cheese: 1 cup

Or Mayonnaise: 4sps
Mixed herbs(Oregano, basil, thyme): 2-3 sps


Easy Garlic bread Making Process:

For the base:
Prep time: 40 min

  • Firstly should dissolve the yeast in lukewarm water
  • Add 1 sp sugar to warm water & dissolve then add Yeast
  • Dont shake it leave it undisturbed till the yeast forms bubbles
  • In a mixing bowl add Flour then add yeast 
  • Make a soft strechy dough, it should not be dry must be wet dough


  • Knead the Dough by pressing it on clean surface & moving 
  • Keep this dough covered with damp cloth in a warm place(Or else keep it on a warm vessel) for 1 hour till it rises
For the stuffing
  • In a small pan add little ghee add paneer cubes & fry 2 min
  • Then add salt & pizza suace & mix remove from heat

For the assembly

For the Cal-zones assembly
Total time to bake: 12 min
Oven temperature: 150*
Heating: both top & bottom

  • Preheat oven 15 min prior to starting the assembly
  • Take a portion of Dough if you want pan size, use small portion of dough
  • Grease the Baking tray with Oil & take a portion of dough & make small disc
  • Flatten it with your hands to make a thick Pancake as shown below in video

  • Add the filling to the left side, add mayonnaise & spread
  • Then cover the right side & seal the edges
  • Spread little garlic mince on top and sprinkle Italian seasoning
  • Make cut marks above & Keep it in the Oven to bake
Cheesy Paneer Cal-zones are ready to serve
