King Fish fry


Surmai Fish fry, Seer fish fillets fried coated with Cornflour for the crispy fish fries, Served with Fish curry Rice & Appitizer drink Solkadhi made with Kokam

With very few Ingredients this crispy fish fry is ready

Ingredients:

Seer fish Fillets: 2
Red chili powder: 2-3tsps
Turmeric: 1/2 tsp
Tamarind paste: 2tbsps
Coconut Oil: 4-5 tbsps
Salt to taste
Cornflour: 1 cup
Curry leaves few

Method

Take Seer fish steaks & clean several times
Marinate with salt leave for 5 min
Mix together Red chili powder, turmeric & tamarind paste
Apply this paste generously on fish fillets & leave half an hr to marinate
Coat these in Cornflour dust off extra then shallow fry in oil with curry leaves or Tawa fry on a pan in lesser oil

Crispy Fish fry is ready to serve

Brinjal Hyderabadi baigan salan


Hyderabadi cuisine could be found in the kitchens of the former Hyderabad State that includes Telangana, Marathwada region (now in Maharashtra), and Hyderabad Karanataka region (now in Karnataka). 


Hydrabadi Brinjal Gravy.....Tastes Super spicy & tangy Name of the dish "Baigan ka salan" Goes well with biryani...Try this you will love it !!!
Recipe of this tangy spicy hydrabadi brinjal
Ingredients:
Brinjal: With slits: 10
Onion: 2
Tomatoes: 2
Chili powder: 2-3 sps
Turmeric: a pinch
Coriender powder: 2sp
Tamarind pulp: 3-4 sps

For Dry Roasting:
Poppy seeds (Khuskhus); 2sp
Dry coconut(Copra): 1 cup
Ground nuts: 8-10

Method:
  • To Make the Gravy first Dry roast all ingredients under dry roasting & Keep aside
  • In a pan add little oil fry Onion sliced 2, tomatoes chopped 2 till mushy. 
  • Then add all these to a blender with above dry roasted ingredients along with Coriender powder, Chilli powder,turmeric....add 1 cup water & blend to a paste
  • Add salt to taste to the masala & Mix
  • Choose small size Brinjals, Clean the brinjals keep the cap intact...just slit halfway to make a pocket
  • Stuff the masala in each brinjal as shown below
  • In a pressure cooker/ Kadai add 5-6 sps oil add little crushed pepper, curryleaves, 
  • Then place stuffed brinjals & fry each side for 2-3 min as shown below
  • Then add the rest of masala and add thick tamarind pulp...3-4 SP's(this is the main tasting ingredient don't miss this one ) mix all together add 1 cup water & cook for a vissel till brinjal cooks...
  • Note : if don't have dry copra replace with grated fresh coconut roast it till brown, can add more groundnuts if you like the nutty taste
Serve this spicy tangy Hydrabadi Brinjal gravy with Chapati, Roti's or Biryani

Oats Rava Thalipeet


Healthy Breakfast Oats & Rava Thalipeet, Instant Dosas are gaining popularity, one such dosa is this Rava & Oats Thalipeet for a healthy start combined with Spinach gravy

Wholesome Instant breakfast which keeps you full for a long time & gives you energy, with the Richness of spinach gravy this is an Ideal Combo

Ingredients Needed:

Oats: 1/2cup
Semolina(Rava): 1/2cup
Carrot: grated: 1/4th cup
Onion: 1
Green chilies: 2
Coriender leaves: little
Water: 1 cup
Salt to taste
Oil for frying

Method to follow:

In a mixing bowl add Oats & Rava then add onion, green chilies, carrot grated salt & 1/2 cup water mix together

Now the batter is very thick, little more water & mix this should be thick thalipeet consistency 

Batter is ready to make Dosas



Take a Tawa(Griddle) add 2 sps Oil & spread one handful of batter out evenly on the tava when tava is cold, so that we can make perfect by hand itself 

keep this a bit thick like thalipeet.  Now on the gas and heat it
Spread 1 sp oil at the sides of dosa & cover lid  cook for 3-4 min on medium heat
Then Turn & cook the other side for 3-4 min
Oats Rava Thalipeet is ready , smear dollop of butter on top and enjoy

Coriender Chicken gravy with Rice Roti


Coriender Chicken Gravy served with Rice Roti try this combination. flavorful green gravy goes well with Rice or Roti

Chicken is cooked in Onion & Tomato gravy which is flavored with coriender leaves try this recipe

Ingredients

Chicken : 500grms
Onion: 2
Tomatoes: 2
Ginger garlic paste: 1sp
Curry leaves: 5-6
Green chilies: 3-4
Poppy seeds: 2sps
Coconut grated: 1/2 cup
Coriander leaves: 1 cup
Chicken masala: 2sps
Oil: 4-5sps

Procedure to follow

Wash the chicken thoroughly and keep ready
In a pan add little oil then add 1 onion julian & fry nicely
Add Green chilies & coriander leaves fry for some time
Then add 1 Tomato chopped & poppy seeds and fry it for 2 min
Switch off the flame and let it cool down
Then add all this to a blender jar along with coconut & 1/2 cup water
Blend to a fine paste

In a Deep dish or Kadai add rest of the oil add curry leaves and Rest of the Onion julians
Fry this till changes colour, then add ginger garlic paste & chicken and fry it for 5 min
Add rest of the chopped tomatoes add salt & cook till tomatoes are mushy
Add chicken masala powder and mix well.
Once chicken is cooked half way add the Grounded paste and cook it with lid for sometime
Then add water to adjust gravy. cook till chicken falls apart from bone

Spicy & flavorful Coriender chicken is ready to serve with Rice Roti & Chicken Kabab

Horsegram Idli for breakfast


Healthy Breakfast Horsegram Idli Soft Fluffy Idlis are great for breakfast. You can make your breay more healthy by adding lentils here is such healthy Idli

Like millet Idlis these Horsegram Idli are also power packed with nutrients

Some other Idli's i have tried are using Foxtail Millet, You can use any millet of your choice
Millets are traditionally important grains,Millets are gaining popularity these days because of their health benefits like high fiber content, gluten free and rich nutritional content. Even Red Rice Idli is healthy breakfast option recipe for Red Rice Idli Recipe

Ingredients for Idli(Makes 24 Idlis)

For Idli Batter:
Horsegram : 1+1/2 cup
Dosa Rice: 2+1/2 cups

Soak Horsegram & Dosa Rice in separate containers for 6hrs 

Wash & Grind Horsegram with  little water to fine paste(dont add too much water you need a thick paste)
Remove in a big vessel
Then Wash & Grind soaked Dosa Rice with little water to a coarse paste
Then mix this with Horsegram paste Paste

Keep in warm place to Ferment Overnite or 4hrs as this batter gets fermented very soon grind it a bit late at night
Procedure For Idli as follows:
After fermentation when making Idli add Salt to batter & mix
Add little water & make it dosa paste consistency
Grease the Idli mould with Oil
Pour a laddle full of Idli batter in each section of Idli

Keep in Idli steamer(Keeping water below)& steam for 20 min
After 20 min switch off the heat & let it cool down a bit
Then remove the Idli stand, let it release its steam a bit
Then with help of a wet spatula(ie dip the spatula in water)
Remove the Idli from each section & serve
Healthy Horse gram Idli is ready Served with Red chutney & sambar
