Sizzling Grilled Chicken

Grilled Chicken easy to make Griiled in oven by Rotisserie method which keeps rotating the Chicken while grilling which keeps the Chicken moist

Marinades are also used to tenderize the meat and add flavor. Rotisserie chicken has gained prominence and popularity in U.S. 


I Have Used My Prestige OTG  & Grilled these Chicken pieces using rotisserie-style where the skewer Rotates & chicken cooks through....You will also enjoy this easy way of perfectly grilling here is the method.

Ingredients:

Chicken pieces :1/2 kg
lemon: 1/2
Gingergarlic Paste: 1sp
Cumin powder :1sp
Redchili powder/Paprika: 2sp
Hung curd/ thick set curd: 4-5 sps
Garam masala:1/2sp
Salt to taste

Method:

  • Clean the Chicken pieces & Make Insertions/ cuts with fork
  • Add salt & lemon juice mix then add Gingergarlic paste & rub the chicken nicely 
  • Set aside for 10 min
  • In a mixing bowl mix together rest of the Ingredients to form a paste
  • Marinate the chicken pcs in this for 1 hr min, upto 4-6 hrs for best results
  • PREHEAT OTG @ 150*
  • Place the pcs in Rotisserie skewer & lock it, place it in OTG
  • Turn the mode to Rotisserie
  • Cook for 20-30 min @ 150*
Grilled Rotisserie chicken is Ready to make it sizzling  roast it on gas flame till it gets charred all sides.

Grilled Paneer Tikka

Grilled Paneer Tikka perfect Appitizer for vegetarians. Make this grilled cottage cheese with minimal ingredients & enjoy simple appetizers which tastes great

Ingredients
Paneer: 200grms

Marination
 ½ cup of hung yogurt
1 tsp ginger garlic paste
1 tsp chili powder
1/2 tsp garam masala
1/2 tsp jeera powder
1sp besan(chickpea flour)
Pinch of turmeric
salt to taste
Squeeze of lemon: 1/4
Method:


  • Marinate paneer with the ingredients mentioned above and set aside in the fridge for 30 mins.

  • Heat a Griller or Sandwitch maker with oil or butter 
  • Remove the excess marination drippings and pierce paneer in icecream  sticks place on hot griller or Tawa and fry. If using Sandwich maker dont close the lid. Let it grill openly 

  • Just cook till the marinade dries up and the paneer turns golden. 
  • This takes only 2 to 3 mins. 
  • Turn other side and grill for 2-3 min
  • Over frying can make paneer harder and rubbery.
  • Serve with chutney of your choice

Malai Chicken Tikka


Grilled chicken is my favourite This Malai Chicken Tikka are Creamy Boneless Tikkas grilled in oven for perfect soft and juicy tikkas you will love these.

Malai means cream, thus cream is added in the marinate to make it richer and tastier.

Here is step by Recipe for Malai Tikkas

Boneless Chicken: 10pcs
Lemon: 1/2
Ginger garlic paste:1 spoon
Chilli powder/ Paprika:1tbsp
Turmeric powder: 1pinch
Curd: 4 tbsp
Cream: 2-3 tbsp
Kasuri methi(dry fenugreek leaves): 1 tbsp
Salt to taste 

Procedure


Take Boneless chicken cut into medium or small pieces


Add  ginger-garlic paste & lemon leave for 5 min


Add chili powder, turmeric powder,  required amount of salt.


Rub these Masalas and salt on chicken really well. Add thick curd, and cream mix well and keep it for marinating for at-least 2 hrs Minimun 1hr


Once the chicken is marinated well  add Kasuri methi and mix Arrange these to skewers I have used my Rotisserie stick from the oven and coat with oil.

Drizzle some oil on the chicken

Pierce the chicken pieces one by one in skewer. Make 2-3 skewers

I had a big skewer so could fit in one go
Preheat oven @200*c

Place the skewers and let it grill for 20- 30 min @180*c in between turn the skewers 

I have selected both heat in the oven as I have a rotisserie it cooks by turning itself.

Remove & serve hot hot Tikkas soft and juicy with onion rings & lemon wedges

Chicken Tikka


Chicken Tikka try this healthy recipe for perfect juicy Chicken Tikka made on Tawa

Chicken pieces boneless: 300grms
2 tsp chili powder
1 tsp coriander powder
1 tsp roasted cumin powder
1tsp Chaat masala
¼ tsp turmeric powder (optional)
1 tbsp ginger-garlic paste
1/2 lemon juice
¼ cup thick curd
Coriender leaves(optional)
Salt to taste

Marinated chicken looks like this


After cooking you can add grill marks it will look like this


Procedure

Take Boneless chicken cut into medium or small pieces

Add  ginger-garlic paste & lemon leave for 5 min

Add chili powder, turmeric powder, coriander powder, cumin powder and Chaat masala required amount of salt.

Once the chicken is marinated well  Arrange these to skewers I have used wooden skewers which are soaked in water
Drizzle some oil on the chicken

Keep it on hot tawa adding little oil Then turn after 3-4 min cook other side also for 2-3 min

Once cooked I have grilled it a bit on my sandwitch maker to get the grill marks

Tandoori Chicken

Tandoori Chicken grilled in oven try this healthy Recipe for perfect Grilled chicken


Chicken pieces cleaned: 300grms
2 tsp chili powder
1 tsp coriander powder
1 tsp roasted cumin powder
¼ tsp turmeric powder (optional)
1 tbsp ginger-garlic paste
1 lemon juice
¼ cup thick curd

Procedure
Clean chicken and cut into medium piece
Add  ginger-garlic paste & lemon leave for 5 min
Add chili powder, turmeric powder, coriander powder, cumin powder and required amount of salt.
Rub these Masalas and salt on chicken really well. Add thick curd, mix well and keep it for marinating for at-least ½ hr to 1hr

Once the chicken is marinated well  Arrange these in Oven tray which is greased with Oil & drizzle some oil on the chicken, Keep it in Oven for ½ an hr @180*

After 20 min if it has left water remove the tray & slowly take out water
After ½ an hr check turn it & keep for 10min to roast

Tandoori Grilled chicken is ready

Grilled Chicken Bites


Grilled chicken Bites, easy to make hassle free grilling chicken in the oven, for this marinate chicken with all Ingredients for a while(no need of overnite), then Grill them till cooked juicy Spicy chicken bites ready for any party

Ingredients Needed:
250 grms chicken cubes & drumstick
2 tbsp chili powder
1 tbsp coriander powder
1 tsp roasted cumin powder
1 tbsp ginger-garlicpaste
3-4 tbsps thick curd
Salt to taste
1:Lemon 
2 sps Butter


Method
  • Pre heat Oven @ 200* for 15 min
  • Clean chicken and make little marks with fork or knife
  • Apply Salt & lemon juice on the chicken pieces leave for 5-10min
  • Then squeeze excess liquid out
  • Add chili powder, coriander powder, cumin powder and little salt.
  • Rub these spices on chicken really well. 

  • Add curd, mix well and keep it for marinating 
  • Once the chicken is marinated well(Min 1hr), heat Oven
  • Cook in grill mode (Heat selection both)@ 180- 200* for 20-30 min

  • Half way (remove water if too much) & turn
  • Smear 1-2sp butter spread out on each piece & cook till turns golden
Enjoy Quick Grilled Chicken Bites with your favorite dips, I like to combine them with Mayo & Serve with lemon wedges


Note:
Use grilling both top & bottom option
Use aluminium foil on the baking tray for avoiding mess
If halfway its not much watery dont remove water just cook it will stay juicy this way
Maintain 180-200* temp of oven
Dont put too many pcs at once, if too much keep two batches/trays

Grilled Fish Steaks


Spiced Fish Steaks grilled,  Tasty & healthy Oil free Grilled Fish Steaks 

Boneless or with bone it tastes good with 

I Have cooked this Grilled the fish steaks on the bone, Marinate the fish so that it gets tender & juicy

I love Fish thali combination of  Grilled Fish & fish curry is awesome try this Sea food Meal
I have used Sweet sea fish called Rawas, you can even use River fish of your choice or any other fish like Seer or Pomfret

Ingredients Fish Tikka 

Fish steaks: 7-8
Lemon juice: 1
Redchili powder: 2sps
Cornflour(or Kabab powder): 1tbsp
Rice flour: 1tsp
Salt o taste
Turmeric 1 pinch


Method for Preparing this Fish

Marinate the cleaned fish steaks: apply salt to taste & 1/2 lemon juice keep for 5 min
Squeze the fish remove excess water 


Sprinkle chili powder Turmeric lillte, 1/2 Lemon juice & riceflour 
Mix & Rub it on fish & leave to marinate for 1/2 hr to 1 hr


Just before grilling in oven Sprinkle Cornflour
In a preheated Oven grill the fish @ 120 * for 10-15 min 


After fisrt 10 min check if cooked....Grilled Fish tikka  ready to be served 
You can even Make this in a pan with Little Oil/ on a Griddle with markings

Enjoy Oil free Grilled Fish Steaks Serve with Lemon & Onion wedges & with Fish meals

Garlic bread with cheese


Quick & Easy Garlic bread with cheese

Best Accompanied with Pizza, you can make Garlic bread with ease follow this simple steps

Ingredients

French loaf: 1
Butter: 5-6 sps
Garlic grated: 4-5 flakes
Mixed herbs seasoning
Mozzarella cheese: 1/2 cup
Tomato sause: little
Chili flakes: little

Method

Cut the french loaf bread to diagonal slices
Butter the bread both sides & slightly roast it one side



Apply grated garlic rubbing it on bread on the roasted side
Add tomato sause little & sprinkle mixed herbs on top
Then grate the cheese on top 
Then place on heated griddle & roast closing lid
Roast this for 5 min till cheese melts
Garnish with chili flakes


Serve along with Homemade pizza

Quick Grilled Chicken Breasts



Juicy Grilled chicken, For a Quick Chicken dish try this Recipe

Quick grilled chicken so marinate chicken with all Ingredients for just 1/2 an hr or Max 1 hr

Ingredients:
2 chicken breasts cleaned
2 tsp chili powder
1 tsp coriander powder
1 tsp roasted cumin powder
¼ tsp turmeric powder (optional)
1 tbsp crushed ginger-garlic-green chili
1 lemon juice

2 sps Butter


Method
  • Pre heat Oven @ 200* for 15 min
  • Clean chicken and flatten the breast bash it little make marks with fork or knife
  • Add crushed ginger-garlic-green chili.
  • Add chili powder, turmeric powder, coriander powder, cumin powder and salt.
  • Rub these Masalas and salt on chicken really well. 
  • Add juice of a lemon, mix well and keep it for marinating 
  • Once the chicken is marinated well, heat Oven
  • Cook in grill mode @ 180- 200* for 20-30 min
  • Half way smear 1 sp butter on each piece & cook
Cut the cooked chicken fillets to Bite size pieces enjoy with mayonaise dip

Grilled Prawns

Prawns/ Shrimp are easy to cook & tastes Devine  Prawns are usually found in 

the ocean, in all countries and nearly all the cuisines of the world has lots of prawn’s recipes. There are two kind of prawns. Smaller ones and bigger ones which are called Tiger Prawns. Prawns are not only very tasty to eat but are very healthy to eat too.

Prawns are a great source of high quality protein, and provide some of the most important vitamins and minerals that make up a healthy diet. They are surprisingly low in calories and are made up of extremely healthy cholesterol.  t makes them an ideal food for those who want to loose weight. Even though Prawns are high in Cholesterol but they are high in good cholesterol and bring down the bad cholesterol.A normal size prawn contains about 2 grams of Fat, 30 grams of proteins and about 125 mg of minerals. This ideal combination of fats and proteins make it very beneficial for the human health. Prawns are also very easy to cook and they don’t take much oil or spices to cook them.



Ingredients

Prawns/ Shrimp: 15 pcs
Red chili powder/ paprika: 3-4 sps
Lemon juice: 1
Turmeric: 1sp
Salt to taste

Method:


  • Clean the prawns by removing its head & shell
  • Then devien the prawns & wash thoroughly
  • Marinate the prawns with all above Ingredients
  • Keep aside for an Hour let the spices get absorbed
  • Heat a Non stick pan add 2-3 sps oil
  • Divide the prawns in two batches
  • shallow fry in Pan cooking both sides for 2-3 min
  • Or till you get the charred grill on it
  • Alternatively can grill in the Oven as well
  • Pre heat Oven for 10 min & grill @180* for 5-6 min
  • Check & turn them & grill for another 5 min
Note:
I have Grilled on a Nonstick pan Itself....
Donot Overcook the prawns just 2-3 min each side is sufficient
Instead of Lemon juice can even use Tamarind paste.

Rotisseries have proven quite functional for cooking rotisserie-style chicken This style of cooking can serve to sear the external parts of chicken, which serves to seal in the flavor and juices of the bird

Grilling is often presented as a healthy alternative to cooking with oil, although the fat and juices lost by grilling can contribute to drier food, Grilled foods can be lower in saturated fat, if fat is allowed to drip out after it liquefies .skewer or brochette, or a rotisserie may be used to cook small pieces of food

Grilled Chicken tandoori..



Sizzling Grilled Chicken tandoori.... is always easy to make just marinate & then Grill in Oven as simple as that

This dish is fat free & makes You wanting for more, so enjoy these succulent juicy Sizzling Grilled chicken...Tandoori style

Ingredients:
Chicken(Boneless) :10 pcs
lemon: 1
Gingergarlic Paste: 1sp
Tandoori Masala :1sp
Redchili powder/Paprika: 1+1/2 sp
Hung curd/ thick set curd: 4-5 sps
Turmeric : 1pinch
Salt to taste

Method:
  • Marinate chicken with 1/2 lemon juice & salt to taste for 10 min.
  • Mix together Ginger garlic paste,Tandoori masala each 1spoon ,Redchilli powder 1+1/2sp, hung curd( or thick curd) 4-5sp ,turmeric then add the Chicken pieces & mix, 
  • Keep the marinate for 6 hrs( atleast min 1 hr)in fridge. 
  • GriilIing- brush little Oil & grill 150* degree for 20 min. 
  • Before Serving heat tikkas on direct Flame(on stove top)for a min for charred Flafour. 
  • Sizzling Chilli Chicken ready to serve...Ennnjoyyy
