Potato Cheese Balls


Potato cheese Balls super easy side dish or make these for quick snacks. This cheese centered crispy Potato Balls are easy to make and can be served for any lunch or tea party

Ingredients

Potatoes(Boiled and mashed) - 2 cups
Kashmiri Red Chilli powder - 1 tsp
Coriander powder - 1 tsp
Cumin Powder - 1/2 tsp
Chicken masala: 1sp
Coriander leaves - 1 tbsp finely chopped
Lemon juice: 1sp
Salt - to taste
Bread crumbs - 1 cup

For filling:

Mozzarella cheese cut to cubes or sticks 1 inch
To coat: cornflour 3sps with water
Breadcrumbs: 1cup

Method

Pressure cook potatoes until mushy. Cool down remove skin & mash it nicely

In a mixing bowl add all the ingredients & little Breadcrumbs till its thick dough consistency

Take a portion of this mix in your hands & make like a flat tikki then Place Mozarella cheese in middle cover from all sides & make round shaped balls

Dip each in corn flour paste then
Roll in the breadcrumbs & press nicely do that breadcrumbs stick to it & coat properly

Heat up Oil for deep frying

Once hot turn to medium & fry the balls keep turning in 2-3 mins....
Once colour changes to slight brown this is ready remove on absorbent

Crispy Potato Balls are ready to serve, enjoy evening snacks with tea/ cofeee

Grilled Paneer Tikka

Grilled Paneer Tikka perfect Appitizer for vegetarians. Make this grilled cottage cheese with minimal ingredients & enjoy simple appetizers which tastes great

Ingredients
Paneer: 200grms

Marination
 ½ cup of hung yogurt
1 tsp ginger garlic paste
1 tsp chili powder
1/2 tsp garam masala
1/2 tsp jeera powder
1sp besan(chickpea flour)
Pinch of turmeric
salt to taste
Squeeze of lemon: 1/4
Method:


  • Marinate paneer with the ingredients mentioned above and set aside in the fridge for 30 mins.

  • Heat a Griller or Sandwitch maker with oil or butter 
  • Remove the excess marination drippings and pierce paneer in icecream  sticks place on hot griller or Tawa and fry. If using Sandwich maker dont close the lid. Let it grill openly 

  • Just cook till the marinade dries up and the paneer turns golden. 
  • This takes only 2 to 3 mins. 
  • Turn other side and grill for 2-3 min
  • Over frying can make paneer harder and rubbery.
  • Serve with chutney of your choice

Oats Cutlet with 2 ingredients

Lockdown Recipe one more with just 2 ingredients make Oats Cutlets. Healthy & tasty best use of available ingredients. 

Where you dont need many ingredients to make a snack best for this lockdown time.

For this healthy vegetable cutlet all you need are Oats & Potato follow this simple procedure below

Ingredients Needed

Boiled Potato(2) : 1cup
Oats(Regular Rolled): 1cup
1 tbsp Redchili powder
1tbsp All spice( Garam masala) powder
Salt to taste
Lemon juice: 1sp
Coriander leaves little 
4-5 sps Oil to fry

Procedure to follow:

Firstly boil the potatoes(I have pressure cooked it)
Once cooled down mash it nicely without any lumps
Add all the spices, red chili powder, garam masala

Add salt to taste & Oats mashed with palms to make powder 
Add Coriander leaves & lemon juice mix it all together 
Check the consistency, if the mix is too soft add more oats powder

Take a portion of this mix in your hands,make  small balls and shape like tikkis.....

In a pan Add Oil & once heated shallow fry 4min on medium heat flipping in between till both sides are golden
Enjoy crispy Oats cutlets for evening snacks, try this healthy snacks for your Kids.

Cabbage & Onion Fritters


Crispy Cabbage & Onions fritters for tea time snacks

Make these easy to make crispy fritters with minimum ingredients in this lockdown period

Ingredients
Cabbage thin strips: 1cup
Onion thin julians: 1cup
Besan(chickpea flour): 2spa
Rice flour: 2sps
Green chilies chopped: 1-2
Coriander leaves chopped little
Salt to taste

Method to make these Crispy fritters

Mix chopped cabbage & onions and add salt to taste leave for 5-6min
Then add green chilies & coriander leaves
Mix and leave for 5more min till it leaves water.
Then add besan & riceflour mix well
(Dont leave this batter for long fry them soon to be Crispy)

In a deep pan add Oil to deep fry
Once it's hot, make the fritters by taking one portion in hand & pressing between palm to make it tikki shape. It must be flat shaped.

Deep fry in medium hot oil & remove on absorbent paper

Serve Cabbage fritters with tea/coffee

Cheese Chila( Besan & cheese pancake)

Cheese Besan Chila also known as Vegeterian Omelette, Tastes just like Omelette this is a quick Protien Rich breakfast. 
With toppings like Onion Tomtaoes & greenchilies topped up with cheese this Pancake is wonderful for breakfast it keeps you full for a long time

Try this Besan chila made just like any Utaapam, pancake with Toppings & cheese

Ingredients:

Gram flour(Besan): 1cup
Cheese: 1/2 cup
Onion: 1
Tomato: 1
Green chilies: 2
Coriender leaves : Handfull
Red chili powder: 1tsp
Turmeric: 1tsp
Water: 3/4th -1cup
Salt to taste
Oil for spreading: 2-3sps

In a mixing bowl add Gram flour & little by little water to form a batter
Add chili powder & Turmeric mix add salt to taste leave it for 5-10 min
Then add little more water to make it pouring batter consistency

Heat a griddle/non stick Tawa 

With the help of a Laddle Pour 1 laddle full batter at centre & spread Outwards

Forming a Pancake, Then add all finely chopped toppings, onion tomato chilies coriender leaves. Add grated cheese. Spread little Oil to the sides, close lid & cook 2-3 min till cheese melts

Remove on a plate & serve with Tomato sauce
Cheesey Besan chila is ready Perfect for breakfast or snacks, Tastes just like Omelette

Poori with Dry Chole


Poori Chole Monsoon special combo.
Chole is a dry chickpeas side dish. along with chickpeas, the ingredients typically include onion, chopped tomatoes, coriander seed, garlic, chillies, ginger, dried mango powder crushed pomegranate seed (anardana) and garam masala. It is fairly dry and spicy with a sour citrus note

Ingredients Chickpeas chole
Soaked Chickpea: 2cups
Onion: 2
Tomato: 2
Gingergarlic paste: 1sp
Coriender powder: 1sp
Garam masala: 1sp
Amchur(dried mango powder): 1sp
Redchili powder: 1+1/2 sps
or (Everest chole masala: 2sps optional)
Grated coconut: 1/2 cup
Oil: 2-3 sps
Salt to taste
Cilantro for garnishing

Procedure
Soak chickpeas overnite or 5-6 hrs
Then presurre cook the Chickpeas( Chana )with little salt & water for 5-6 visels

In a heated Pan, Add Oil  saute Onions chopped till light golden
Add ginger garlic paste, fry add chopped Tomatoes fry till mushy
Add salt to taste & all Masalas or (else You can Omit these & add Everest Chole masala Instead)
Fry the masalas & Add cooked Chana (Chick peas) Mix everything add little water & cook 2-3 min
Lastly add grated coconut & mix cook for 2 min
Garnish with cilantro....
Spicy tangy Chole is ready serve with Poori

Potato cheese Croquettes super easy side dish or make these for quick snacks. This cheese centered crispy Potato Croquettes are easy to make and can be served for any lunch or tea party

Ingredients

Turmeric powder - a generous pinch
Kashmiri Red Chilli powder - 1 tsp
Coriander powder - 1 tsp
Cumin Powder - 1/2 tsp
Coriander leaves - 1 tbsp finely chopped

Bread crumbs - 1 cup

Mozzarella cheese cut to cubes or sticks 1- 1½ inch

Method

Ingredients

Paneer Samosas


Crispy Samosas with Paneer & Potato spicy filling, Todays special evening snacks for this seasons IPL Finale

Make easy snacks, by prepping most of the things and enjoy the match with these crispy samosas as i'm doing 

Very simple and easy method to follow where you can prep the filling before itself and keep ready 



Ingredients For Outer cover Poori:
All purpose flour(Maida): 3 cups

Caraway seeds(Ajwain): 1tsp(Optional)
Ghee/butter: 1sp

Oil for Deep frying

For Stuffing

Potato(Boiled):1large

Paneer crumbled: 1 cup
Mashed Peas:1 cup

Green chili: 1
Onion chopped: 1
Redchili powder: 1sps
Jeera(cumin)powder : 1/2sp

Garam masala: 1sp
Chaat masala: 1/2sp
Coriender leaves: 1/4 cup
Salt to taste





Method

Preparation of Poori (Outer cover):


  • Seive All purpose flour (Maida) add caraway seeds(Ajwain) salt & ghee mix to form crumble
  • Then add little little water & make a hard dough 


Preparation of Stuffing:


  • Heat a Pan add Greenchili & Onion saute for few min  add Boiled & grated potato with Cooked & Mashed Peas mix then add crumbled paneer
  • Add salt, Redchili powder, Jeera powder, Garam masala & chat masals mix add coriender leaves 
  • Mix well stuffing is ready Keep aside

For the Assembly


  • Make small portions of Dough & make lemon sized balls of it
  • Then Roll Out Thick poori, and make marks with fork(Optional)
  • Cut the Poori into 2 as shown in pic
  • Fold one side & other side join by applying little water to edge to form a pocket as shown in pic

  • keep the Potato & paneer mixture in middle 
  • Hold it in your hand to form a triangular shape then fold the end sides to close & press it 


  • Make all the rest rolled dough similarly to form samosas
  • Heat up Oil in a deep dish, once hot turn the flame to medium
  • Fry the samosas 2-3 at a time for 3 min then turn around
  • Fry all the samosas and remove on absorbent
  • Crispy Paneer samosa ready to relish with evening tea

Potato smiley fries


Potato smiley fries for quick snacks, kids always like fried snacks for weekend being summer holidays we must provide them what they demand😃😃

Make these easy Potato smiley fries at home And include oats in it for guilt free snacks

Yeah being a parent i just have a tactic to put something nutritional Oats or some veggies in the snacks so that the kids will not run out on fiber, This time added Oats with the potato & made these crispy smiley which you can make and keep in the fridge and use 3-4 days.

Ingredients for smiley:

Boiled Potato: 2
Masala Oats(Italian): 1/2 pc (Optional)
Corn flour: 2-3Tbsp
Salt to taste
Pepper powder: 1tsp
Oil for deep frying

Procedure is as follows:

Boil the potatoes & cool them then remove the skin & grate it finely
Make a mash add the Oats just roughly rubbing with your hand to form bit powder
You can skip the oats if you dont have I have added it as it gives additional flavor to the dish
Then add cornflour & Salt & pepper mix everything with little wet hand this way it will bind together

Now make a thick roll of this mixture as shown above

Wrap it in a sheet tightly rolled & keep in freezer to set for 10-15 min

Once its little firm cut these into disks as shown below
With the help of straw or Skewer sticks prick two holes then with a small spoon shape like a smile

Smileys are ready to fry

In a deep dish add enough oil for deep frying
Once hot turn the flame to medium and fry adding 4-5 at a time till golden

Remove on an absorbent paper & serve with Tomato ketchup, crispy smiley fries are ready

Keep the rest mixture wrapped in that plastic sheet in any air tight container in the fridge and can be used in 2-3 days
