Caramel Custard


Caramel Custard cool pudding can be made with just 3 ingredients

Soft egg custard with caramel sauce is very easy to make

Ingredients
Eggs- 2
Milk- 200ml
Sugar for Caramel-5 spa
Sugar for Egg mix- 3sps

Procedure to follow
First make the caramel in a pan by adding sugar with 1tbsp water
Let the sugar become golden then switch off

Pour this in your cake tin or any pudding container I have used steel bowl

For the Custard
Whisk eggs lightly
Warm up the milk & add sugar to it & mix
Pour warm milk in eggs little by little & keep mixing
Pour this mix over the caramel

Bake this In oven place a tray with water & keep the caramel Custard bowl on this to bake
Bake at 120- 130* for 30 min.

Once done keep it in the fridge to set for 2hrs. Then remove from the mould carefully by inverting it on a plate

Caramel Custard is ready to serve

Milk Cake


Sweets for Diwali try this Milk Cake simple recipe creamy Milk solids

Ingredients 
Milk: 1+1/2 ltrs
Sugar: 1+1/4th cup
Ghee to grease
Lemon juice: 2sps

Procedure is as follows 
First use 1ltr milk boil it nicely & then add half spoon lemon juice to curdle it
Again boil nicely if it doesn't split use some more lemon juice 
Once the split milk is boiled switch off and drain
Then wash this Chenna & let it drain off for 1/2 an hour

In a deep Pan add 1/2 ltr milk
Boil it and reduce it to 1/2
Then you will get condensed milk like texture 
Boil it some more stirring it and scraping from sides
Then add lemon juice 1/2sp
And keep mixing add the prepared chenna
Add sugar and cook till it thickens for about 5-6 min
Switch off and let it cool for a minute

Then transfer to greased(with ghee) dish
and let it cool down then cut to pieces 

Enjoy creamy Milk cake

Brownie Cobler


Brownies are surely very tempting & rich....give your loved one a piece of this with love. For this Brownie cobler serve it with Vanilla Icecream

Just follow this simple Recipe & in an Hour Sinfull Chocolate Brownees will be Ready

Ingredients:
Butter: 100 grms
Chocolate: 200grms
All purpose flour: 1 cup
Sugar: 100grms
Eggs: 3
Milk: 2sps Optional
Coco powder :2 tbsps

Method:
  • Pre heat Oven on 150* for 10-15min
  • Whisk  Eggs in Beater for 2-3 min then add Powdered sugar & whisk again for 5min
  • Melt butter & Chocolate on Double Boiler(Keeping the Chocolate butter pan on a Boiling water pot...like on steam), Once melted cool a bit
  • In a big mixing Bowl take the Whisked eggs add butter & melted chocolate mix together
  • Sieve All purpose flour & Coco together
  • Slowly add the dry Ingredients in the Mixing Bowl & Mix Nicely
  • (No need of BAKING POWDER)
  • Check the Consistency if Required add milk
  • Pour in Cake Tray greased with Butter
  • Bake on 150* for 15-20 min
  • Once Cooled cut to Desired Shapes 
  • Serve with a scoop of Vanilla Icecream 

Note: Temperature of Oven May Vary for OTG & Microwave so check Your Instuction Pamplet of Oven for Baking

Chow Chow Bath


South Indian Breakfast specials In Karnataka, Upma is served with  popular sweet dish  Kesari bhath, both in equal quantity in one plate which is very popularly called as the "Chow Chow Bath

Upma  or Uppittu is a common South Indian breakfast dish, cooked as a thick porridge from dry roasted semolina or coarse rice flour. Various seasonings and/or vegetables are often added during the cooking, depending on individual preferences.

Upma is usually made with Semolina
Ingredients

Semolina (Rava) (1 cup)
Cooking oil (3-4 tbsp)
Mustard seeds (1/2 tsp)
Ginger root (1/2 tsp, grated)
Green chillies (3-5 med, chopped)
Chopped onions (1 med, chopped)
Chopped Tomato: 1
Ghee: 2sps
Salt to taste
Vegetables of choice: Optional Peas, carrots, tomatoes, capsicum, etc
Lemon juice (2 tsp, optional)

Method of preparation

Dry-roast Semolina (rava) until it just begins to turn brown, then keep aside.

In a large saucepan/wok, heat the cooking oil.

Add mustard seeds and wait for them to sputter.

Then add ginger, green chillies and chopped onions and fry until onions caramelise.
Add tomato fry then add Roasted semolina

Add vegetables If you like,
Then add salt to taste and 2 cups of hot boiling watermix quickly to avoid lumps forming

And cook turning down the heat, lastly add Ghee
The upma is done when all the water is absorbed by the rava.

Garnish with chopped cilantro leaves and lemon juice. Serve with Mixture on top

Kesari bhath is an Indian dessert that is popular throughout the country.

The word kesari refers to the spice saffron which is used, resulting in its saffron-orange-yellow-colored tinge.Though it is a sweet dish, in Karnataka, it is prepared not only as a sweet dish but also for normal breakfasts
In North India it is served as a sweet dish called Sheera Suji/Sooji Halwa

Ingredients

Rawa (Semolina): 1cup
Ghee: 3-4sp
Sugar: 3/4th cup
Water: 3 cups
Saffron strands:3-4
Cashew  to garnish
Procedure

Boil the water & keep on low heat
Side by side heat a deep pan
Add ghee then add cloves
Add Rawa & fry on low heat till roast
It should just start to change colour
Then add the boiling water & mix
Cook for 2-3 min then add sugar
Add soaked saffron mix

Cook till dry. Serve with nuts.

Mango Kulfi


Mango Kulfi, Summer vacation enjoy fresh mango by making kids favorite Mango kulfi

This Mango season make use of variety of mangoes 

Vacation is here for kids along with summer crafts & other activities indulge them in making this lovely treat, they will be happy to help as my little one did

This is my Third type of Kulfi with Fresh mango & cream Kulfi make this today and relish this fresh natural mango Kulfi

Ingredients Needed:

Mango pulp or puree: 1+1/4cup/ 250ml
Condensed milk(Amul milkmaid): 400ml
Fresh Cream: 250 ml(1cup)
Milk powder:1/2cup(optional)

Method:

Peel the Mango skin & cut into pcs put in a blender & make Puree then add milk powder & mix
Beat the cream with hand blender or whisk slightly when its cold then add mango puree
And further beat till it mixes now add condensed milk 
and whisk till everything is mixed up

Transfer to a Container. Then fill in the Kulfi moulds close & freeze for 6-8 hrs.
If you have extra after filling moulds you can freeze it in containers with lid


For serving dip the freezed Kulfi moulds in water then roll with your palm hold the stick & pull out. Enjoy chilled kulfi

Ven pongal & Millet pongal


Happy Sankranti this is the festival of first harvest. We prepare pongal a lentil dish for the occasion.  I have done Ven pongal which is rice & lentil cooked and tempered with spices.


For the sweet I have made Millet pongal. Millet & lentil cooked with jaggery  & milk

Make healthy gluten free pongal for any occasion using any millet, I have used kudo Millet to make this super easy kheer

Millets are traditionally important grains,Millets are gaining popularity these days because of their health benefits like high fiber content, gluten free and rich nutritional content. So replace your Rice with Millets & make all the dishes healthy & low calorie

Ingredients for Millet kheer(Serves 4)

Kudo Millet:1 cup
Moong daal(Yellow lentil): 3 sps
Jaggery: 1cup
Milk: 3cups
Cashew & Raisins: ½ cup
Ghee: ¼ th cup
Cardamom Powder: ½ sp
Water: 3 cups

Procedure is very simple & it cooks very soon:

Soak Millet Overnite for best results(min 1 hr)
Heat a Pan add 2sps ghee, add drained moong daal & fry 2 min

Then add washed & drained Millet & fry it as well. Add 3 cups water & cook till soft
It will bloom up and double in quantity
Add the Jaggery & cook till Jaggery melts
Then add Milk & cook on slow flame till it thickens
Lastly add cardamom powder

Fry the Cashew Nuts & Raisins in the remaining ghee & pour it over the pongal

Mix well & serve this healthy gluten free pongal for any occasion.

Ven pongal Ingredients

Rice:1 cup
Moong daal(Yellow lentil): 4-5 sps
For tempering
Oil: 2-3 sps
Mustard seeds
Curry leaves: 4-5
Green chilies:2-3
Cumin: 1sp

Pressure Cook Rice & yellow daal with 3glasses of water
Cool down add salt to taste
Make a tempering add oil & all other ingredients under temper
Once it sizzles add to the pongal & mix

Fruits Custard 2


Fruits salad with custard, made using custard powder store brought & served with Fresh fruits 
Always include lots of fresh fruits in your diet, this way you can have all seasonal fruits which are healthy


I have Made this custard in a very simple way, this is the Eggless version using Vanilla custard powder slow cooked & served chilled with fruits salad....


Ingredients:

Whole Milk: 500 ml

Sugar:5 sps (as per taste)

Milk: 1/2 cup(room temperature)

Custard Powder(Vanilla): 2 tbsps

Mixed Fruits chopped: 2 cups

(Apple, banana, Mango)


Method: 

Bring the Milk to Boil & cook it for 5 more min
Add sugar appx 5 tsps Mix well check the taste if you want more sweet
Mix custard powder in a bowl with half cup milk(room temperature) to make a paste
Slowly add the above custard paste to Milk & keep stiring
Cook for another 5 min till it thickens


Remove from heat & let it cool down & come to Room Temperature
If you want you can even whisk this mixture 
Place this  in any container with cap...close tightly & freeze
Freeze for 1 hr for best results
Remove from the freezer mix 
Serve with fruits & Nuts of your choice

Sheer Korma( Semaiya kheer)


It's Festive time again, Eid Special Sheer korma or roasted Semaiya kheer is a sweet pudding prepared on this occasion 

This is usually accompanied with lots of nuts which makes it very rich.  Usually its made using Long roasted Vermicelli. If you dont get this thin Vermicelli can make using the regular Vermicelli as well



Ingredients


Vermicelli: 2cups

Ghee: 4sp
Milk: 1/2 ltr
Sugar: 1+1/2 cups
WATER: 3 cups
Badam powder: 2 tbsps
Nuts(cashew & pista): 1/2 cup
Pista: few for garnishing

Method


    • In a Kadai take Ghee add Vermicelli & fry till golden brown 
    • Keep water in a vessel & bring to boil

    • Once the Vermicelli is roasted add hot boiling water to it & cook 5 min



    • Then add the Milk & let the Vermicelli cook in milk

    • Once it bubbles up you can see that the vermicelli is almost cooked

    • Add sugar to this and mix well

    • Cook for 2 min & add Badam powder for taste

    • Finally add Add the Nuts fried in ghee


    Sheer korma is Ready to be served Garnish with pistas....Serve hot / chilled, Enjoy Eid

    French Toast


    French Toast simple yet delicious Breakfast this sweet & soft Egg dipped breads are my favorite breakfast of all time. This Continental Breakfast keeps you full for a long time & gives you instant energy

    Have a wonderful weekend with this Sunday Breakfast

    Bread & Egg is a favorite combo when it comes to Breakfast. Here is an instant breakfast which you can make easily.

    Breakfast is an important meal of the day, Morning you can prepare various breakfasts and most of the South Indian breakfasts need pre-pep, like Idli or dosa need to soak & ferment the batter which takes time

    For those with busy schedule try making Instant breakfasts which do not need pre- preparation.

    Ingredients for French toast:

    Bread slices: 8-9
    Eggs: 3
    Sugar: 4-5 tbsps
    Milk: 3/4th cup
    Butter: 2-3 sps

    Make these soft Egg dipped breads as follows

    I have used Fruit bread which is slightly sweet, you can use Milk bread or even brown breads are fine

    Usually per egg 3 breads can be dipped, so adjust the sugar accordingly 
    (For 3 eggs 4 sps sugar will be enough if yOu like more sweet you can add 5sps)

    Whisk the eggs slightly, add sugar & stir till sugar is dissolved completely 
    Then slowly add milk little by little & mix

    Take a Pan & heat it add butter , then dip the bread in egg mix & turn and dip the other side also
    Remove &  place it on the buttered pan repeat for other 3 slices(depending on the pan)
    Fry on medium heat for 2-3 min each side till its cooked remove

    Then again dip the Breads & Fry rest of the breads in 3-4 pieces per batch

    Lovely French toast is ready enjoy this delicious Continental breakfast



    Note: Dip the Breads as and when the pan is empty, dont dip it before as it will be soaking more and becomes soggy
