Mango Frooti Fresh Juice


Mango Frooti Fresh Juice using king of fruits "Mango"

Relish this Mango season with Homemade Frooti without any preservatives, Try this Fresh Frooti Juice.

You will Love the taste & its so affordable, making at home saves buying so many Bottles of juice needed weekly for the summer

Mango season has just started, and at the start we get some sore Mangoes as well which doesnt taste good

Such Mangoes are perfect for this frooti, this recipe is a Savior as if we make direct juice we need more sugar to make the juice sweet, so Instead make this Frooti style juice all you need are these Ingredients mentioned below

Ripe mangoes(Sour ones): 2
Ripe mangoe(Sweet): 1
Sugar: 1cup
Water:1-2 glases


Method to follow:
Simple & easy procedure to make this tasty Frooti

Firstly make a small cut above the mango & check if its sweet or sour

Put the sour mangoes in a pressure cooker with little water
cook this for 1-2 visels then cool down & open remove & cool

This way the sourness will get reduced, remove skin of this mango
then extract the pulp & remove the seed, take this cooked pulp in a blender

Now add 1 Ripened sweet mango to this, just the flesh remove the skin, as shown above

Add sugar & blend well till sugar dissolves completely, you will get a thick Mango pulp

Add 1-2 long glasses of water & mix to dilute the juice as the pulp is very thick, after adding water it will look like this below

If you prefer very thick juice add 1 long glass water, check the sweetness if you want sugar you can add as per you prefernce of sweetness

Pour it in a Jug/Bottle, Serve chilled in Glasses & Enjoy the Frooti Fresh Juice

Dark Chocolate Fudge with Nuts


Mothers Day special Dark Chocolate Fudge with mixed nuts, tastes heavenly try this easy chocolate fudge recipe for this mothers day

All you Need is just three ingredients for your  dark chocolate fudge Enjoy this divine luxurious chocolate

Ingredients:
Dark chocolate: 150 grms
Condensed Milk: 150 grms(less than 1/2 tin)
Mixed Nuts: 1/2 cup
Butter: 3tbsp

Make this Rich Dark Chocolate fudge, follow this easy steps

Firstly Melt the Dark chocolate on a double Boiler

Keep the Bowl of chocolate on a boiling pot(water filled pot)
Stir & melt the chocolate on steam, once it just comes to melting stage

Add Condensed milk & butter & mix

Just when it melts, slow down the flame let it be on steam
Add the mixed nuts mix well & switch off

Dont cook the chocolate it must be just melting & runny

Take silicon Moulds & pour spoonfull in each moulds
Do this quick before the chocolate starts setting in

If the chocolate starts setting in before finishing all moulds just keep it again on the simmering pot & melt till its runny

Once all the Moulds are filled, keep these in a box with lid or cover with cling film
and refrigerate for an hour or two, these will be set

Indulge in this chocolaty fudge by removing it from the Moulds


Note: You can even set  by spreading the mix on a greased tray then after set cut it to desired shapes

Neer dosa with Jaggery(Goddu ravo)


Neer dosa  literally meaning Water dosa is a crêpe prepared from rice batter. It is light type of dosa, an Indian dish. Neer dosa is a delicacy from  Karnataka part of Udupi cuisine. 'Neer' is the word for water, Rice is soaked in water for 3 to 4 hours. It is then ground to make a runny rice batter. A thin layer of batter is poured onto a heated flat griddle (tawa) greased with oil. The batter is spread with the base of a ladle or bowl to form a pancake. It is flipped to heat both crusts and removed from the griddle when the crust becomes dry Neer dosa comes out soft It is served hot with chutney or Gravy


This is a popular Breakfast Item in Karnatakas Coastal belt, I grew up all my life eating this for breakfast....We call it Paan polo in Konkani & typical gravy which goes well with this is sprouted Moong Amti or Liquid Jaggery(Goddu ravo)


This is versatile dish can be had as Breakfast with chutney or Moong amti a Konkani sidedish or Can be served for lunch with Chicken curry...love these combo Here is the Recipe No fermentation Required




Try this Neer dosa/ Panpolo

For Neerdosa:
DosaRice :2 cups 
Coconut 1/2 cup

Just soak DosaRice for 4-5 hrsor leave it soaked overnite
Then grind in the Morning adding Coconut 1/2 cup to Rice with 1 cup water 
Grind to smooth paste add more water(1 to 1+1/2 cups) & make it thinner than Normal dosa 
Batter should be watery, add salt & MIX 

In nonstick pan grease with Oil...we usually grease oil using Onion for this to get flavour 
Then Pour Thin batter & keep Moving the pan in circles to form thin coating of Dosa
Or else sprinkler the batter like splashing it on hot griddle left & right side to form pancake
cook for a min each side with lid then turn around.....
Soft Paanpolo/Neerdosa Ready to be served with Liquid Jaggery(Goddu ravo) for Breakfast, Or as lunch with Chicken curry....Enjoy

Special Veg Fried Rice


Vegetable Fried Rice is a nice way to Include lots of Vegies in the platter. Specially for children who always make fuss to eat veggies...

This Special Veg Fried Rice is made with a twist of taste, Has spicy Garlic flavour

Wonder how to make regular fried rice spicy & Garlic flavoured, you will be amazed with this trick i use, check the recipe for more details....

When we get Brored of Pulav & Other rice Items this Tasty & Quick veg Fried Rice is a savvior.....Just chop some veggies, fry it add Rice & other Sauces & Your Veg fried Rice is Ready....I find it Easy for Packing Tiffins

Ingredients
Cooked Rice :4 cups
Capsicum : 2
Spring Onion: 4
Carrot : 2
Ginger garlic paste: 1tbsp
Red chilli sause: 2 tbsp
Soya sause: 2 tbsp
Oil: 4sps
Cilantro & Spring onion for garnish
Hot & sour soup powder: 2tbsp



Method

·       Chop capsicum & carrots to small cubes
·       Spring Onion chopped finely with little greens
·       Take a Wok heat it then add Oil
·       Add Ginger & garlic paste & fry 
·       Add Spring onion, Capsicum fry for 2 min
·       Add carrots & fry nicely till carrots are cooked
·
·       Mix well & add Cooked Rice
·       Now keep mixing then Add all the sauses
·       Soya sauce & Red chili sauce
·       Add little salt mix
 Lastly add soup powder mixed in 1/2 cup water mix & coat the rice nicely
IIt will seam sticky but fry for a min, check the taste add salt if needed 

Lastly   Sprinkle Cilantro & Spring Onion Greens


Vegetable Fried Rice is Ready to be served, twist of taste is with soup powder, gives it Spicy Garlic Flavour

Chicken Patties Burger


Chicken Patties Burger spicy Chicken Patties/tikkis with very less oil

Summer Vacation special Yummy Burgers filled with Juicy Chicken Patties, Serve Chicken Burger for snacks or just these Chicken Patties, Kids love this snack, We love it too 

Taste of Mayonnaise goes well with the Chicken Patties, even my junior loves this Patties I call this time saver snack, first I serve him Patties he relishes those till that time I'm done with Burger assembly

Accompany this with French Fries & Snacks/ dinner ready 

Also try my famous KFC Style Chicken burgerFrench Fries


For 
Chicken Patties
Ingredients Needed
1 cup Minced Chicken 
Egg
1/4th tsp Turmeric
2 sps Ginger garlic paste
1 medium sized onion: finely chopped
1sp Redchili powder
1/2 sp coriender powder
1sp All spice( Garam masala) powder
Finely chopped Coriander leaves.
1 tsp lemon juice

1/2 cup All purpose flour(Maida)
Mixed herbs for seasoning
4-5 sps Oil to fry

Take Minced chicken, or In a food processor Mince boneless chicken finely

In a pan take 2 sps Oil add add ginger and garlic paste 
Then add finely chopped onions & saute it
Add the Minced chicken & fry then add all spices, red chili powder
Add turmeric powder,Coriander powder, 
Sprinkle little water if its too dry add  little salt
Cook for 5-10min till dry

Remove from heat add lemon juice, and keep it aside,leave it to cool
Once cooled add this mince in food processor so that it becomes smooth
Lastly sprinkle coriander leaves & green chilies 

Whisk one egg add this to the above mix refrigerate for 10min


In a plate spread all purpose flour add mixed herbs & little salt mix it well.


Make small balls of the mince and shape like patties/ tikkis
Roll in flour mix & coat well both sides

In a pan heat 4sps Oil & once heated shallow fry patties on medium heat 
Fry till both sides are golden
Remove on an Absorbent Paper



For Burgers
Burger buns: 4
Butter: 2-3sps
Burger Mayonaise: 1/2 cup
Lettuce: 4 portion
Tomato slices: 8 pcs
Tomato sauce

Cut the burger buns from middle to half
Butter it & heat it up a bit
Apply Burger mayonnaise & place lettuce tomato
Then place Chicken Patties sqeeze Tomato sauce on top, Apply mayonnaise & close the burger


Juicy Chicken Patties burger is ready to serve, enjoy the messy burger

Corn Flakes Mixture( Spicy Chivda snacks)


Corn Flakes Mixture/ Chivda, crispy  Spicy snacks using dried Cornflakes, Easy & quick snacks with a shelf life

This is a mixture you can make & stock it up for a month, try this easy alternative to make your own mixture at home rather than buying packets


All you need is a packed of dried cornflakes,as shown below which is easily available at any food stores

I prefer Frying just half a pack & saving the rest as it blooms up after frying & quantity is doubled, so makes you munch on more !!!!



Ingredients needed:

Dry Corn Flakes: 2 cups
Oil for deep frying: 300ml
Groundnuts fried: 1/2 cup
Curry leaves fried: a few
Chili Powder/Paprika: 1 teaspoon
Salt to taste
Powdered sugar: 1 tbsp

Method:

Fry the Groundnuts & curry leaves & keep aside
In a Deep dish add Oil & heat it up, then reduce to medium 
Add cornflakes in small batches, just quarter to 1/2 cup at a time


It will fry & bloom up, turn it once & before it turns brown remove on an absorbent
Repeat till you fry one cup of cornflakes, then sprinkle chili powder & salt mix 
then add powdered sugar & mix well( this must be done when the flakes are still hot)

Now repeat frying of one more cup, then sprinkle chili powder & salt & Sugar mixing well
Lastly add Fried groundnuts & curry leaves & mix both the batches of fried Corn flakes


Let it cool down completely then Store In Airtight containers
Happy munching, snacks are ready for tea time, just waiting for the rains, to enjoy this Chivda

Mirchi Pakoda(Chili Fritters)


Crispy Mirchi Pakoda, best tea time Indian snacks.
Try these tasty chilli fritters for crispy snacks, Long chili (Mirchi) is dipped in Batter & deep fried these fritters are usually served on a rainy day with Tea

These chilies are not very hot, so you can eat them directly, some prefer de-seeding it as well

Ingredients:
Mirchi: Slit in between
For batter
Besan(chicpea flour): 1 cup
Chili powder/ paprika: 2 tsp
Ajwain(caraway seeds): 1tbsp
Cooking soda:1/4th tsp
Salt to taste
Water to make thick batter
Oil for deep frying


Simple & Easy recipe for crispy Mirchi Pakoda

Take the Mirchi & Slit in between ,de-seed if needed, sprinkle some salt & mix leave it for 5 min

Make a thick batter by mixing all ingredients with water to make a thick paste, add little soda & mix

Dip each mirchi in batter fill in the slits & coat exterior well

For deep frying:

Heat Oil in a deep dish till its hot
Reduce heat to medium & add Mirchi dipped in batter one by one
Fry till brown, remove on absorbent

Enjoy Crispy Mirchi Pakoda, on a rainy evening with tea
