Watermelon Rind Dosa


Watermelon Rind Dosa is a sweet Pancake made using watermelon or just the rind(white part of watermelon) This is a soft and spongy pancake using all healthy Ingredients


Usually after eating watermelon, we through away the Rind of watermelon. Instead you can use it to make watermelon flavoured dosas called Surnali's(soft spongy doas) can even make Neer dosa, Recipe for watermelon neer dosa




For this Sweet Dosa ingredients needed:

DosaRice :2 cups 

Methi seeds(fenugreek): 1tsp

Coconut 1 cup

White part of watermelon: 1+1/2cup

Jagerry or Thin Jagery: 2cups

Ghee: 1-2 sps for Frying

Note: I have made a small quantity using just 1 cup Dosa Rice

Procedure is as follows:

Just soak DosaRice along with Methi seeds for 4-5 hrs

Later wash the soaked rice 2 times & Add coconut in a blender

Then add the watermelon rinds to the blender along with very little water

Then grind all the ingredients to a  thick fine paste

Leave it to ferment for 4-5 hrs or Overnite



While making dosa add Thin jaggery(availble in organic stores)

Or else you can melt normal jaggery and add to the batter

Leave it to rest for 10 min

On a  nonstick pan grease with 1sp Ghee.

Add a laddle full of batter in middle don't spread let it form a thick pancake

Cook with lid for 2 min each side then turn around...




Note: You can even add Flattened rice(Poha) soaked 1/2 cup to the rice mix
If you want more spongy you can grind the batter with Buttermilk or curd 1/2 cup
If your batter has not fermented you can even add soda pinch just before making dosas

Mutton gravy & Ragi Ball


Spicy Mutton gravy served with Ragi Ball(Mudde) made with Finger Millet

Ragi(Finger millet)/Nachni and Rice are the most important staple grains of South India. Jowar and bajra are also cultivated and consumed in the drier parts of the region. Regular meals consists of Ragi mudde or steamed dumpling made from ragi flour, a curry to roll bits of the dumpling often called Saaru, Rice and Yogurt.  Among the Non vegetarian meal Ragi ball with Mutton gravy is very popular 

Ingredients:
Mutton(lamb): 500 grms
Potato: 1cut in cubes(Optional)
Oil: 3-4 sps
Turmeric: 1pinch
Bay leaves: 2-3
Onion sliced: 1
Tomato long slices: 1
Coriander powder: 2sps

To grind
Onion: 2
Tomato: 1
Cloves: 4
Cinamon; 1 inch
Ginger garlic paste: 2sps
Green chilies: 3
Coriender leaves: 1cup
Coconut: grated 1/2 cup


Method of preparation:

Wash the Mutton 2-3 times thoroughly

Heat a pan on medium flame
In a pan add Little oil & add Cloves & cinnamon add Onion julians(grinding) & fry 
Then add Green chilies & ginger garlic paste fry little 
Now add Tomatoe(Under grind)cut length wise & fry till mushy
Lastly switch off the heat and add Coriender leaves 1cup, let everything cool down

In a blender add all the above fried ingredients coconut, coriender powder add water 1 cup & blend to a fine paste

I have used pressure cooker to cook the meat
Keep the cooker on heat add oil then add Bay leaves: 2-3
Add Greenchili slit 1-2 add Onion sliced & fry
Tomato long slices & fry then add the Mutton & fry it
Add Turmeric & fry till it leaves water
Then add the ground paste(Masala) & fry nicely till it leaves sides
Add salt to taste & Potato cubes mix check the taste if you want more spicy add redchili powder
Add 2 cups water & close cook for 5-6 whistles till the mutton is soft cooked

For the Ragi Mudde:

Take 4 cups water in a Aluminium pot add 2 sps cooked rice bring to boil
Then add 1 1/2 cups Ragi flour turn down the heat let it bubble up
Then mix everything using wooden spoon( can use chapati belan as well)
Mix well making round circles so that if any lumps will go...
If its too watery add litlle more flour & mix close
Cook for 2-3 min with lid then mix well making round circles....
Switch off  heat & cool for a min
Pour little water on a plate so that it doesn't stick...
Take a small portion of hot ragi on this plate( it must be little hot) dont cool it completely
Then knead the Ragi balls to round shapes on the plate...
Keep this in a Hot box & Repeat the process for rest Ragi portions

Serve Mutton gravy with Ragi ball & Rice Enjoy hot Mutton gravy

Quick Chicken Manchurian


Quick Chicken Manchurian Easy to make starter 
Try this Manchurian style chicken for any party as it is super easy and yumm....

Ingredients:

Boneless Chicken: 1/2 kg
Egg: 1
Lemon: 1
Redchili powder or paprika: 2sps
All purpose flour: 1 cup
Oil: for deep frying
Capsicum: 1
Spring onion: 2
Garlic 2 ps
Knorr chinese manchurian powder


Method

  • Marinate boneless chicken with salt, lemonjuice for 10 min, 
  • Then squeeze out excess water, add egg, mix add paprika or redchili powder mix well. 
  • Take oil in deep kadai for frying...
  • Make batches of 6 pcs sprinkle maida just before frying on 6 pc & coat well then fry till golden....
  • Again sprinkle maida & coat for next batch just before frying......
  • Remove on absorbent paper

In a separate Wok

Take Oil 3 sp, add garlic chopped(OPTIONAL)
Sauté capsicum chopped, Chopped spring onions & fry 
Pour in 4sps of Knorr Chinese Manchurian powder mixed in 1 cup water
Mix & add 1/2 cup more water& bring to 1 boil check required consistency 
When thick add Fried chicken( no adding salt) & Mix well 
Lastly garnish with spring onion
Note: You can Use Cornflour 3sps & Redchili  powder 1sp mix instead of Knorr chinese manchurian powder(then Garlic is a must.)

Enjoy this dry chicken Manchurian dish for any Party

Blueberry Muffins


Bake these Blueberry muffins for any party or just tea time snacks its perfect

So for your next kids party or kitty party try these Blueberry muffins which are easy to bake




Ingredients:
All Purpose flour( Maida): 1/2 cup
Butter(unsalted): 50grms
Baking powder : 1 tbsp
Eggs : 2
Sugar:Measure 1/2cup (then powder it)
Blueberry Jam/compot: 3-4 sps
Vanilla extract: 1tsp
Milk: 2sps 




Method:
Preheat Oven @ 150*



With whisker whisk eggs for 2-3 min, add powdered sugar whisk more.
Add butter & whisk all together for 2-3 min
Add vanilla essence & mix



Sieve Flour (maida) & baking powder  together.
Slowly add Flour mixture & whisk for a minute till all combines

Add 2sps Milk(optional) & mix  again 

Grease muffin tin with butter & dust flour to make a thin layer remove excess
Pour cake batter till 3/4th fill & pat so it settles down.

Bake for 15-18 min @ 140* in Oven(Convention mode)
Makes about 10 muffins, Enjoy soft centered oozing out with blueberry jam muffins
