Kadabu Rice Dumplings


Steamed Kadabu Rice Dumplings filled with Fried Gram powder and shaped in Kadabu Mould 
This is offered to Lord Ganesh as Neivedya so
enjoy this Ganesha festival with this sweet

This is usually served with Kayi Rasa  Coconut milk (KayiRasa)Sweetened with Jaggery

You can make these Rice Dumplings with some other fillings also such as Bele obbatu filling(Lentils & Jaggery filling)
For Kadabu (Yields about 15) 
Rice Flour: 2cups
Water: 2+1/2 cups

For Fried Gram filling(Yields about 20)
Fried Gram:1 cup
Copra: 1 cup
Jaggery: 1cup


Procedure for Kadabu

For Fried gram(Pappu) filling
Grate copra & lightly roast & toss it
lightly roast fried gram also
Mix both add jaggery grated
Then in a blender, run to form a dry powder
Mix well, Stuffing is ready

For outer Rice covering 
Boil water in a Deep dish or Pot style dish
Reduce the flame once the water boil
Add Rice flour & stir slowly till it forms lumps
If it's very hard sprinkle little more water & Mix

Once it's coming together remove from heat 
Remove the Rice Mudde on a plate
After a minute shape it to big ball & Keep it in hot box

Apply ghee to the Kadabu Mould
Take a portion of Rice Mudde (it should be warm) in your hand and flatten it then place in the mould
Add the filling about 1-2sps then close the mould and press so that it seals


Keep a Steamer ready with water below (or can steam in Idli cooker)
Place the prepared Kadabu in the steamer one by one slowly (it should not break open)
Steam it for 5-8min

Cool down & serve with Sweetened Coconut milk (KayiRasa)

Fruits Sasam (Fruits chats)


Fruits Sasam is a Mixed fruit chat which is sweet & spicy. Best fruits side dish which is prepared at various functions such as weddings and festivals

Its the Festive season where we bring a variety of fruits so its apt to make this sasam using these fruits 
I have added Pineapple, Apple and banana you can even add Mango & grapes. But avoid Citrus fruits like Orange, Mousambi as it gets bit bitter

So make the best use of Fruits this Festive season and enjoy sweet and spicy Fruits salad

Ingredients:
1. Pineapple chopped  - 1/2 cup
2. Apple chopped - 1/2 cup
3. Banana-2
4. Coconut - 1 cup
5. Roasted Red chilies - 5
6. Mustard seeds - 3/4 tsp
8. Salt to taste
9. Sugar 1-2 sps

Procedure to follow: 
1. Peel Pineapple,& apple & cut it into small pieces.
2. Peel the banana & cut it to pcs  Keep them in a bowl.
3. Grind coconut, chilies, mustard seeds & salt with little water.
4. Cook the pineapple with little water for 2 min and add Apple and cook further 2 min

5. Then add Sugar 2sps mix and cook 2 min
6. Lastly add banana pcs mix and switch off flame. Let's it cool down completely
7. Now add the prepared ground paste and mix

Mixed Fruits chat is ready to serve, enjoy and relish this Sweet and spicy fruits side dish

You can even temper it with mustard seeds and curry leaves
Can be served chilled or as it is, no need to cook after adding the Ground paste, enjoy the mixed fruits chat

Curd Rice with Pomegranate


Happy Janmashtami, it's the birth of Sri Krishna which is celebrated with all the preparations Krishna  likes, such as Curd with Poha( flattened rice); Curd Rice (Rice dipped in yogurt) Pachadi to name a few

Even a variety of sweets are offered to The Lord like Besan ladoo Till ladoo Puffed rice ladoo

Try this cooling Curd Rice which cleanses your apitite
Ingredients
Cooked Rice: 2cups
Curd: 1cup
Pomegranate: 1/2
Salt to taste
Coriander leaves little

For tempering
Oil: 2sps
Mustard seeds: little
Curry leaves: 5-6
Cashew: 4-5
Green chillies: 3

Procedure
Cooked the Rice soft & mushy once cooled down add the curd & salt mix we'll
Then add the pomegranate kernels & chopped coriander leaves

Leave it aside for few min to soak up
Then check the consistency if required add more curd & Mix

For the tempering
Heat up oil Add mustard & once splutters add curry leaves add green chilled & fry
Then add cashew pieces fry little then add this to the curd rice
Mix everything nicely; can refrigerate it & serve cold

Chicken Dry



Spicy Chicken dish which is easy to make try this Chicken Dry which is super tasty

Bored of eating gravy then try this Dry Chicken dish this can be made with easily available Masala

Ingredients
Chicken: 500 grms
Capsicum: 1
Onion: 2 Julian cut
Ginger Garlic paste: 1tbsp
Onion: 1 chopped
Tomato: 2 chopped
Green chillies: 3-4
Redchilli powder: 2tsps
Garam Masala/Chicken Masala: 1tbsp
Oil: 4sps
Salt to taste

Procedure is as follows
First cook the chicken in pressure cooker
For this Heat up pressure cooker add Green chillies,1 Onion chopped fry it then add Ginger Garlic paste mix it then add tomatoes chopped & fry add little salt so that tomato gets mushy
Then add chicken fry then add 1 cup water & cook for 2 visels

Once it’s cooled remove & drain excess water but keep it aside for further use

In a pan Add rest of oil Add 2 Onion Julian cut(slices) fry little & add Capsicum fry add the cooked Chicken Mix well add Redchilli powder & Garam Masala powder; adjust salt by adding little Mix nicely add little of stock  water saved mix & cook for 2-3 min till dry


Spicy Chicken Dry is ready serve with Roti or as side dish with Rice enjoy my Non Veg platter
