Chats special Sevpuri


Evening Snacks chats are the best option for evening snacks try these easy snacks for your new year party....Easy To Make Sev poori, Last month had shared making of Spicy tangy Pani poori

You can make these Crispy little Papadi/ Puri in small quantities for your party, instead of getting the large packets of poori

Ingredients needed:
For Papadi/Poori:
All purpose flour:1/2 cup
Wheat flour: 1/2 cup
Rava(Semolina): 1cup
Water: 2cups
Oil for deep frying

For the chats:
Boiled Peas: 4sps,
Boiled Potato: 4sps
Chopped onion: 1
Chopped tomatoe:1
Pav bhaji masala/ chat masala : little 
tamrind paste:2sps
Jaggery: little
salt to taste
Sev for garnishing
Recipe for the papadi/ poori

Soak 1cup rava with 2 cups water for 1/2 hr
To this add maida & wheatflour & little oil to make thick dough. 
Make  thin chapati & cut to small poori sizes...
For papadi prik holes with fork(Flat pooris to Used for Sev Poori)
Deep fry in Oil till crisp....
Similarly for some poori dont prik with holes it will puff up (puffed poori for Pani poori)
Deep fry in Hot oil
For chats assembly sev poori : 
Mix boiled Peas, boiled Potato with Chopped onion, chopped tomatoes,Pav bhaji masala,chat masala & little salt, tamrind paste, Jaggery mix like a salad. 
Place flat poori in plate, on each poori place salad then put lots of sev on top.

Masala Upma with veggies


Breakfast is the first thing we eat in morning, so eating healthy breakfast with vegetables which is filling is Ideal, Masala Upma with vegies is a light breakfast which can be eaten in morning & keeps you full


Upma  or Uppittu is a common South Indian breakfast dish, cooked as a thick porridge from dry roasted semolina or coarse rice flour. Various seasonings and/or vegetables are often added during the cooking, depending on individual preferences.

Upma is usually made with Semolina(Rava) or Broken wheat(Lapsi)

Ingredients
Thick Semolina (Bansi Rava) (1 cup)
Cooking oil (3-4 tbsp)
Mustard seeds (1/2 tsp)
Ginger root (1/2 tsp, grated)
Green chillies (3 med, chopped)
Chopped onions (1 med, chopped)
Chopped Tomato: 1

Garam masala:1 tbsp

Ghee: 2sps
Salt to taste
Vegetables of choice: Peas, carrots, beans,capsicum, etc.
Lemon juice (2 tsp, optional)

Method of preparation

Dry-roast Semolina (rava) until it just begins to turn brown, then keep aside.
In a large saucepan/wok, heat the cooking oil.
Add mustard seeds and wait for them to sputter. 
Then add ginger, green chillies and chopped onions and fry until onions caramelize.
Add tomato fry then add Roasted semolina
Add vegetables, salt and 2 cups of boiling water mix quickly to avoid lumps forming
And cook turning down the heat, lastly add Ghee
The upma is done when all the water is absorbed by the rava.

Garnish with  chopped cilantro leaves and lemon juice. Serve with Sev Mixture on top

Homemade Chocolate for holidays


Make Homemade Chocolate for holidays, easy way to make these sweet bites, with just 3-4 Ingredients

Chocolates are loved by all, May it be kids or grown ups everyone loves these coco bites, make your own chocolate for this holiday

You can add any nuts of your choice or even dip fresh fruits & enjoy chocolate coated fruits

Ingredients
Milk powder: 1 cup
Coco powder: 2 tbsp
Sugar: 1cup
Butter: 2 tbsp
Water: 3/4th cup
Chopped nuts(almonds/ cashew)

I have made thick blocks, you can even make it like normal bars of chocolate

Simple & easy method to follow

First mix the milk powder with cocopowder & sieve it together
In a sausepan add sugar & water just till sugar dips keep it on heat

Let sugar melt & come to a boil
Add butter now & mix it will form bubbles
Check for sugar consistency

It should form just one string don't boil more
Add the Milk powder & coco mix

Combine till it forms paste, add nuts & mix

You can even coat strawberries with this Choco at this stage
Remove on a greased tray, spread it out making 2 mm thick bars make marks & leave it to cool down

Once it completly cools & sets cut out pcs or bars, Homemade chocolates ready

You can store it by wraping in foil paper, can store for 4-5 days

Enjoy fruits dipped in chocolate


Note: Don't overboil the sugar,it must be just one string consistency
After adding Milk & coco powder just mix till combined don't cook for long once it bubbles remove
Coating with fruits must be made before it becomes thick

Malabar spinach & Prawns gravy



Malabar spinach & Prawns gravy, very famous for its taste this spinach is combined with Prawns or clams to make flavourful  gravy which is a part of Konkani cuisine

Typical of leaf vegetables, Malabar spinach is high in vitamin A, vitamin C, iron, and calcium. It is low in calories by volume, but high in protein per calorie. The succulent mucilage is a particularly rich source of soluble fiber. Among many other possibilities, Malabar spinach may be used to thicken soups or stir-fries with garlic and chili peppers.
In Karnataka Cuisine, the leaves and stems are used to make Basale Soppu Saaru/Curry, Goan speciality its combined with prawns or clams In the Western Ghats in Maharashtra, it is used to make bhaji (भजी). It is also known as deto in Konkani.

For this gravy needed Ingredients:

Malabar Spinach: 1 bunch
Prawns: 300grms

To grind
Onion: 2
Coconut: 1/2
Red chilies: 6-8
Coriender powder: 2sps

To temper:
Oil: 3 sps
Mustard seeds: 1sp
Garlic crushed: 5-6 flakes

Method to prepare Malabar spinach:

Firstly remove the leaves & wash it
Then the stem parts, there are two types of stems: one is very tender other is bit hard
So seperate the two, then cut the tender stems to small pieces
Peel the harder stems outer skin & cut it finger size sticks
Chop the leaves finely, vegetable is ready to be cooked
In a deep dish add chopped malabar spinach along with stems 
Add chopped Onion & 2 glases water & keep it to cook on medium heat
This will take about 20-30 min to cook

Wash the prawns thoroughly deviening it & keep aside

In a blender add all Ingredients under to grind & make a fine paste
Add this to the cooked Spinach stir then bring to a boil
Lastly add Prawns & cook for 5 min


To temper heat Oil in a dish add mustard seeds
Once it splutters add crushed garlic & fry till golden
Add this tempering to the Gravy & close

Instead of Prawns you can add Clams(Tisre) or fish stock to make it flavourful
Malabar spinach & Prawns gravy is ready to serve with Hot Red boiled Rice enjoy

Paneer Pakoda (Cottage cheese fritters)


Crispy Paneer Pakoda, Try these tasty Cottage cheese fritters for crispy snacks, Paneer is a fresh cheese common in Indian cuisine. It is an unaged, acid-set, non-melting farmer cheese or curd cheese made by curdling heated milk with lemon juice, vinegar, or any other food acids. 
Paneer is protien packed & full of Calcium, Good for health

Ingredients:
Paneer: Cut in thick sticks
For batter
Rice flour: 1 cup
Chili powder/ paprika: 2 tsp
All spice powder: 2tbsp
Cumin powder: 1tsp
Salt to taste
Water to make thick batter
Oil for deep frying



Simple & Easy recipe for crispy Paneer Pakoda

Make a thick batter by mixing all ingredients with water to make a thick paste
Dip the Paneer sticks & coat well
For deep frying:

Heat Oil in a deep dish till its hot
Reduce heat to medium & add Paneer sticks one by one
Fry till golden brown, remove on absorbent

Crispy Paneer pakoda(Cottage cheese fritters) ready

Homemade Pizza

For Quick & Easy Pizza recipe for all pizza lovers follow this method

Ingredients:

For Pizza Base:

All purpose flour: 1+1/2 cup
Yeast: 1+1/2 tablespoon
Sugar: 1teaspoon
Milk: 1/4 cup
Water: 3/4th cup
Salt little

For toppings:

Garlic chili sause or Pizza Sause
Capsicum cubes: 1/2 cup
Sweel corn kernels: 1/2 cup
Tomato chopped: 1/2 cup
Any other toppings of your choice:
Mushrooms/ Panee:r/Chicken
Mozzarella Cheese: 1 cup
Mixed herbs(Oregano, basil, thyme): 2-3 sps

Easy Pizza Making Process:

For the Pizza base:
Prep time: 40 min


  • Firstly should dissolve the yeast in lukewarm water
  • Add 1 sp sugar to warm water & dissolve then add Yeast
  • Dont shake it leave it undisturbed till the yeast forms bubbles
  • In a mixing bowl add Flour then add yeast mix & little Warm milk


  • Make a soft strechy dough, it should not be dry must be wettish



  • Knead the Dough by pressing it on clean surface & moving forward
  • Do this for atleast 6-8 times till its streachy, use little flour & rub to hands to remove dough which is stuck to your hands
  • Keep this dough covered with damp cloth in a warm place(Or else keep it on a warm vessel)
  • After One hour the dough will double up, just bash it to remove Air, Your Pizza dough is ready


For the Pizza assembly
Total time to bake: 15 min
Oven temperature: 150*
Heating: both top & bottom
  • Preheat oven 15 min prior to starting the assembly
  • Take a portion of Dough if you want pan size, use half of the dough
  • Grease the Baking tray with Oil & take a portion of dough & make small disc
  • Flatten it with your hands to make a thick Pancake as shown below

  • I bake this Pizza base for 2-3 min first, then remove it
  • Add Oil to the sides, then add pizza sauce & spread it out
  • Sprinkle the mixed herbs seasoning
Add the Toppings of your choice

  • At this stage I Bake the pizza for 8 or 10 min @ 150*
  • Check after 8 min if the base starts to brown remove the pizza
  • Add grated Mozzarella cheese, best is to directly grate it on the Pizza spreading properly\
  • Bake with just the Top heat(Grill) for 3-4 min just till the cheese melts
  • Remove & let it cool down a bit
Wait is Over Pizza Assembly is ready in 15 min, cut the pieces & enjoy cheesy pizza

Pomfret Curry & Fry


Pomfret curry & fry this fish is loved by all, it cooks easily its flesh is very sweet, I have made this Creamy curry with coconut milk & Spicy Rawa(Semolina)fry

Goan curries:


Goa cusine has a huge influence in Spicy Fish curry. Goan curries use a lot of coconut, curry leaves while chili peppers, spices and vinegar are also used. Fish curry and rice forms the staple food of the community, I have grown up feasting on this cuisine, Spicy curry being favourite along with Fish fry



The traditional coconut curry is a curry made with coconut juice is quite popular. The Goan fish curries and prawn curry are known for their taste and renowned in the whole of coastal India while fried fish dish in their style is well known.This spicy Fish curry is a  coconut and kokum curry which is also very popular



Fish Curry for Fish 3 Pcs

Ingredients

Coconut grated: 3/4th cup
Red chilies: 4-5
Tamarind/ Amsol: 2sps
Turmeric: 1pinch
Coriender: 2sps
Coconut milk :1 cup




Method:


Gind All the Ingredients (Except coconut milk)with 1 cup water & make a fine masala

In a Deep dish(kadai) add this masala & little water(to make curry consistency 1 cup water)
Bring to boil then add salt to taste
Add cleaned fish & cook covered for 8 min
Then add coconut milk & cook for 2 min

Serve this Fish curry with Hot Rice & fish fry

Ingredients For Fry:

Pomfret fish : 4 Tail

Red chili powder: 2-3tsps
Turmeric: 1/2 tsp
Tamarind paste: 2tbsps
Salt to taste



Method
Take fish steaks & clean several times
I have halved it & given slits
Marinate with salt leave for 5 min
Mix together Red chili powder, turmeric & tamarind paste
Apply this paste generously on fish fillets 
Leave to marinate for 5 min
Coat these in Semolina(Rava)both sides & shallow fry in oil or Tawa fry on a pan in lesser oil

Fish fry is ready to serve, Enjoy Sea food Meals
