Ghee Rice & Peas gravy


Ghee Rice & Peas gravy this combo goes well for lunch, spicy Peas & potato gravy blends well with plain ghee rice or Jeera rice.

Children love ghee rice as its flavorful than plain rice &

for children little gravy is enough to hide some vegetables & serve

They love the idea of peas & potato & usually call this 
combo Pav bhaji
(Peas gravy served with bread).

So I was delighted to make this Ghee Rice & Peas gravy 

combo & little one ate as if its Pav bhaji & no doubt this 

disguise worked fine!!


For the Peas Gravy Ingredients:

Peas: 2 cups soaked

Potato: 1 large

Tomato: 2

Onion: 1-2

Red chilies: 4-5

Coconut grated: ½ cup

Coriander powder: 1 tbsp

Coconut Oil: tsp

Everest garam masala: 1tsp


Method to follow:

Pressure cook the soaked Green peas along with cubed Potato 

(don’t overcook just 2 whistles with just enough water)

In a pan add Oil(I have used coconut oil as it gives more 

flavor you can use regular oil) 

Saute sliced Onions till its golden add Red chilies & fry.

Switch off the flame then add grated coconut & mix it leave it to cool

Blend these in Mixer Jar with water to a fine paste.

In a Pan add little Oil once hot add chopped tomato & fry it 


(Adding little salt helps to soften it) till it gets mushy


Then add the Pureed Masala & fry add the Boiled Peas & potato mix

Add coriander powder & Garam masala & mix cook for 2-3 min.

 Adjust the gravy consistency by adding required water.


Spicy Peas & Potato gravy is ready to serve



Ingredients for the Ghee Rice:

Rice: 2 cups

Mustard little

Cumin(Jeera): ½ sp

Green chili: 1 slit

Ghee 3-4 sps

Salt as per taste

In a pressure cooker add Ghee once heated add Mustard 

wait till it splutters


Then add Jeera & Green chilli

Add washed & drained rice & fry for 2 min

Add 4 cups water & close the lid, put the Pressure whistle & cook for 2 whistles

Once the cooker releases pressure, open & fluff it with a fork

Ghee Rice is ready for lunch enjoy it with peas gravy.


Note: I have used Normal Sona Masoori Rice, you can use Basumati if you wish

No Bake Biscuit Cake


Chocolaty Biscuit cake,and its No bake just mix & freeze till it sets and your biscuit cake is ready, try this easy recipe

When the kid demands some chocolate indulgence, we think of making cake & if there is no time to bake one or No Ingredients you can try making this easier version of Biscuit cake


Prepare this in advance and keep it in fridge or else engage your little one to help you & both can finish making this in no time, My little one is an enthusiastic little baker, he always wants to help me, so i gave him the task of breaking the biscuits and the mixing it with chocolate ganash, then  tired little one took a nap till the Biscuit cake got set in fridge, when he woke up Volla the chocolaty cake was ready. 

Ingredients:
For the chocolate sauce
Fresh Cream: 2-3 sps
Chocolate Bar:1
Butter: 1sp

For the Ganash mix
Fresh Cream: 2/3rd cup
Coco powder: 1/2cup
Sugar:1/2cup
Biscuits: 10


I have used Parle G & some chocolate biscuits, you can use any biscuits of your choice, just break it with your hands and keep ready to mix it with ganash

Procedure For the Chocolate sauce
Melt cream & chocolate bar on double boiler as follows:
In a small saucepan, add about an inch of water and bring it to a simmer. Place a small bowl over the saucepan and add the chocolate and butter and 2-3 sps cream over very low heat, cook everything together just until the chocolate 
melts.(This is double boiler method)
Cool down and use half of this chocolate sauce as first layer on the moulds and freeze for 1/2 an hr

Procedure For the Ganash
Once again on Double Boiler, ie Placing a small bowl over the boiling saucepan Add Cream one it heats up add cocopowder & sugar mix well till it forms a paste
Remove from double boiler once its little thick

Cool it a bit, then add the cut biscuits & mix well

Remove the moulds from fridge & fill in this mix as second layer then add the chocolate sauce on top

Keep in fridge to set for 3 hrs or else you can keep in freezer for 1 hr till it sets

For serving remove from Moulds and cut it in strips or as cake piece and enjoy this delectable chocolaty Biscuit cake

Vegetable Kurma with Chapati


Vegetable Kurma side dish for Chapati/Roti or ac-compliment for rice

This is a dish which has gravy along with mixed vegetables mildly spiced try this colorful side dish


Kurma perfect side dish with Roti for Breakfast or as a meal with Rice


Ingredients:
Potato: 1
Cauliflower florets: 1cup
Carrot cubed: 2
Beans :1cup
Tomato: 1
Oil: 3sps
Mustard seeds:1 tsp
Curry leaves few
Aachi garam masala: 1sp


For the masala

Coconut grated: 3/4th cup
Green chillies: 2
Coriender leaves: 1/2 cup


Make a paste of coconut & Green chili & coriender leaves with little water & keep aside
Then In a pan add Oil when heated add mustard seeds & curry leaves
Then add Onion & sauté Add Tomato & cook till soft (Add little salt so that tomatoes will soften)
Add all Veggies & give it a mix, add water little & cook it

Then add this coconut chili paste (blended) & mix well
Add garam masala & cook with lid for 2 min
Adjust salt & add more water if you want to make it Gravy consistency
Kurma is ready enjoy with Chapati/Roti/ Rice

Millet Kheer


Make healthy gluten free Kheer for any occasion using any millet, I have used Banyard Millet to make this super easy kheer

Millets are traditionally important grains,Millets are gaining popularity these days because of their health benefits like high fiber content, gluten free and rich nutritional content. So replace your Rice with Millets & make all the dishes healthy & low calorie



Ingredients for Millet kheer(Serves 4)
BanyardMillet:1 cup
Moong daal(Yellow lentil): 3 sps
Jaggery: 1cup
Milk: 3cups
Cashew & Raisins: ½ cup
Ghee: ¼ th cup
Cardamom Powder: ½ sp
Water: 3 cups


Procedure is very simple & it cooks very soon:

Soak Millet Overnite for best results(min 1 hr)
Heat a Pan add 2sps ghee, add drained moong daal & fry 2 min


Then add washed & drained Millet & fry it as well. Add 3 cups water & cook till soft
It will bloom up and double in quantity

Add the Jaggery & cook till Jaggery melts
Then add Milk & cook on slow flame till it thickens
Lastly add cardamom powder 
Fry the Cashew Nuts & Raisins in the remaining ghee & pour it over the Kheer

Mix well & serve this healthy gluten free Kheer for any occasion

Egg & Bread Scramble


Bread & Egg is a favourite combo when it comes to Breakfast. Here is an instant breakfast which you can make easily.

Breakfast is an important meal of the day, Morning you can prepare various breakfasts and most of the South Indian breakfasts need pre-pep, like Idli or dosa need to soak & ferment the batter which takes time

For those with busy schedule try making Instant breakfasts which do not need pre- preparation.

Try this easy Egg & bread scramble also called as Bread usli or Bread upma which is very tasty

Ingredients 

Bread 4-5 slices
Eggs-2
Onion: 1
Tomato: 1/2(optional)
Cumin: 1tsp
Redchili powder: 1sp
Coriender leaves: 4-5sps
Lemon juice: 1/2
Turmeric: 1pinch
Salt as per taste

Method to follow

Take the Bread slices & cut it to bite size pieces( i have used even the sides)
In a Wok add Oil & heat it then add cumin
Once its fried add chopped onion saute for 2-3 min
Then add tomatoes & salt fry till softens
Add Redchili powder & turmeric mix
Add the beaten eggs & scamble lightly( dont over scramle it must be bit runny)
Add the bread pieces & mix well till it gets coated completely 
Garnish with coriender leaves & lemon juice

Tasty breakfast is ready to dig in. Enjoy Egg & bread scramble

Poori Bhaji 300th Post


Poori Bhaji, Soft puffed up Poori with Boiled Potato stir fry my start to 2018.

Special Breakfast to start 2018 & my 300th post 

Ingredients For Poori:
Wheat flour : 2 cups
Oil: 2 sps
Water: 1 cup
Salt to taste
Oil for deep frying

Method
Take flour add salt mix make a hole add Oil & water
Mix it slowly to form a soft dough...add flour if necessary
Knead & keep aside for 5 min then
Make  lemon sized balls of the dough
Roll out in a small circle or roll out chapati size and cut out in small circles
Heat up oil in a deep dish, add one poori then with slotted laddle press it from sides till it puffs up
Turn the poori & cook other side, remove on an absorbent paper
Repeat for the other pooris one by one



Potato Bhaji



Boil & peel potatoes & dice them
In a pan heat 2 sps Oil add mustard once splatters 
add chana dal & fry, add jeera(cumin)1/2 sp
Then add Greenchilies 2 fry add Onion chopped 1
Fry onions add salt to taste, turmeric &mix
Add diced potatoes toss mix well
Garnish with coriender leaves
