Cucumber Cake Steamed



Special Sweet dish for Krishna janmashtami

Traditional Konkani dish, sweet Cucumber cake steamed also called as Toushe bhakar is a sweet dish made with White cucumber

Healthy cucumber cake which tastes devine, Easy way of making this steamed delicacy given below:
I made this cake last week on Raksha bandhan for my brothers, everyone loved it....

Traditional touch I steamed it in Turmeric leaves which gave it aroma & distinct taste just love anything steamed on turmeric leaves

Got lots of compliments for this dish, biggest one being it just tasted like the one Mom makes....


Ingredients needed:


Semolina/Kesari rava: 1 cup
(Thick Rava)

White Cucumber: 1 big(heaped cup)
Grated Coconut: 1 cup
Jaggery :1 cup grated
Ghee(Clarified butter): 3 sps







Procedure:

Roast the rava on low flame then add ghee 3sps & roast it till it slightly changes colour
Bring it down to room temperature
Add grated cucumber & mix

Blend the Coconut with 1/2 cup water to a fine paste
Add this to the Cucumber & Rava Mix, keep this to soak for 1/2 an hr


Grate the Jaggery & keep ready
Mix the Jaggery to the above mix & leave for 20 min
Then the jaggery will melt & the mix will look like this

Grease Cooker container or Cake tin with ghee
Then add this mix evenly, Steam it for 40-45 min
Keep checking in between I usually press it with the back of spatula & level it

Once cooled, Remove & serve with Ghee Cucumber cake ready to Relish

Note: If you are steaming in Cooker Containers you can even keep this mix dividing in 2-3 containers, this way it will cook soon & will not be soggy
I usually press it with the back of spatula & level it after 20 min again steam it
The cake should be completely cooled down then you can remove it easily
