Spinach & Kidney Beans Gravy



Healthy & Nuritious Spinach & Beans Gravy Goes well with Rice or Rotis

All you need are these Ingredients:

Red Kidney Beans: 2 cups
Spinach: 2 bunch
Greenchilies: 3
Tomato: 2
Coconut: 1/2 cup

For tempering:
Oil: 2sps
Mustard seeds: 1sp
Curry leaves: few



Method: 

Soak Red kidney beans(Rajma) in water for 5-6 hrs or Overnite
Pressure cook this with salt to taste, Remove after 4 visels

In a pan add little water & washed Spinach
Add tomatoes & greenchilies & blanch all together
Close lid & blanch(cook) for about 5-8 min
Once the leaves change color its cooked
Cool it down, Then In a a blender add coconut grated
Add Blanched Spinach, tomatoes & greenchilies & grind to a coarse Paste

For tempering:

In a deep dish add oil, once heated add mustard
Once it gets spluttered add curry leaves, Then add the Pureed Palak
Mix add Cooked Kidney beans & very little stock from the cooked beans
Adjust salt. Bring to a boil....

Serve this Spinach Kidney beans gravy with Rice, Garnished with Carrot gratings
