Pineapple cake with Pineapple Coolie


Pineapple cake with Pineapple Coolie & whipped cream
Soft Pineapple flavoured sponge layered with Pineapple coolie & whipped cream, taste of pineapple at its best

Try this for Birthday parties/ Anniversaries


I made this cake for my Mom's Birthday last Month, every year I bake cake for Birthdays last year's Moms Birthday had made Chocolate Cake every one loves chocolate, so this year tried my hands on Pineapple Cake with Pineapple coolie & whipped cream


Visit to parents place was fun even Baking in coastal climate was quiet challenge full didn't have my baking tools so result was a rustic looking cake & cream also started melting, But the taste was good....





All you need are these Ingredients:


All Purpose flour( Maida): 1 cup

Butter(unsalted): 150gms
Baking powder : 1 tbsp
Eggs : 3
Sugar:Measure 1cup (then powder it)
Pineapple  essence : 1tsp
Milk: 1 cup
Pineapple finely chopped : 5sps

For Pineapple coolie

Pineapple finely chopped: 3/4th cup
Sugar: 6-8 SP's

For Garnishing

Whipped cream
Cheries
Almonds




Method:

  • Preheat Oven @ 150*
  • Sieve All purpse Flour (maida)  baking powder  together. set aside
  • In food processor  With whisker attachment - whisk 3 eggs for 2-3 min, add powdered sugar whisk more. 
  • {You can even whisk egg whites & yolk separately
  • If you whisk seperately add egg whites at the last}
  • Add butter & whisk all together for 2-3 min
  • Add pineapple essence & mix 
  • Slowly add Flour mixture & whisk for a minute till all combines
  • Add 1cup Milk & run the processor for another minute, then add chopped pineapple mix
  • Grease cake tin with butter & dust flour to make a thin layer remove excess
  • Pour cake batter & pat so it settles down. 
  • Bake for 40 min @ 150*........
  • Check in between if coked by piercing a spegheti/sate stick / fork if it comes out clean its cooked

Note: Temperature of Oven May Vary for OTG & Microwave so check Your Instuction Pamplet of Oven for Baking



Once the cake cools down then only proceed for garnishing


For pineapple coolie

In a saucepan add chopped pineapples & sugar & heat it up
Once it starts cooking keep stirring it will thicken cook apprx 8-10 min
Switch off when its goey & evenly forms thick syrup consistency
Let it cool down & come to room temperature

Meanwhile whip double cream / whipping cream by whisk on medium speed till it forms light peaks

Now your cake must have cooled down

If you want to layer it cut from between to form layer or you can make 2 same size cakes( if you want it big size)
Spread 2-3 sps pineapple coolie in between & spread whipped cream on it
Place the other cake layer on top now again spread remaining pineapple coolie
Decorate sides & top with whipped cream
Place cherries & almonds as you like

Soft Pineapple cake with Pineapple coolie is ready to indulge
