Lunch Thali 3


Third Lunch Thali Rice with Masala Daal(Lentils) & veggie Accompanied with Red lobia & dill leaves side dish
Prepared in traditional South Coastal Vegeterian Meals style

Gravy: Combination of vegetables and lentils simmered with spices, coconut, tamarind and seasoned with Gheeasafoetida, curry leaves and mustard, it is an integral part of every formal meal.
lentils provide protiens & veggies have required fibre, Rice gives cabs for the energy...Lobia & dill also have lots of Nutrients



Preparation of Masala Daal
Daal( lentils and vegetables spiced and tempered in oil with mustard,asafoetida and curry leaves.) 

Masala Daal with Ridge gourd, this is a coastal Daal prepared in the Coastal belt where Ridge gourd is abundantly available in summer season. So this Vegie being seasonal is relished in Many dishes

Ingredients Required:
Ridge Gourd: 1
Oil: 3-4 sps
Mustard seeds: 1sp
Curry leaves: 5-6
Onion:1
Tomato:1
Coconut grated: 5sps
Red chilies: 4
Coriender seeds: 1sp
Garam masala powder: 1sp
Toor Daal(Bengal gram daal): 2 cups



Procedure to follow, Simple method:

Wash the vegetable Ridge gourd & peel the outer skin which is hard then chop it to bite size pieces
Wash the Daal(Lentils) nicely & pressure cook it with Chopped Ridge Gourd & 4-5 cups water for 2-3 Vissels

For the gravy :
In a pan take 2 sps Oil heat it then add sliced Onions & fry
Add red chilies & coriender seeds & fry little
Lastly add coconut & give it a toss fry little & switch off heat
In a blender add all these fried ingredients add 1/2 cup water Grind to a fine paste


In a Deep dish:
Take oil add mustard seeds let it splutter
Then add curry leaves & add the chopped tomatoes
Fry till tomatoes are mushy & add Blended paste mix 
Then add Cooked Daal & vegies along with its stock 1 cup
Add Garam masala powder & adjust salt
Now let it boil, close with lid & cook 5 min

Check the consistency if its too thick add bit more water
Masaledar Daal with Veggie ready to serve with Rice

Accompliments:

Red lobia(small alsande) with Dill leaves(Sabaski/shepu): 

Wash Soaked Red lobia & pressure cook it
In a deep dish
Take oil add mustard seeds let it splutter
Then add curry leaves & add 2 Green chilies
Add chopped Onion fry then 
Add chopped tomatoes fry till mushy
Add chopped Dill leaves & fry 
Add little water & cook for 5 min
Add cooked lobia season with salt
Mix everything and cook for 2-3 min
Red lobia with Dill leaves(sabji) ready

Serve this Thali for any Vegeterian Meals
